I love a good, healthy breakfast sandwich to start my day. There's just something about biting into a chewy bagel with melty cheese and fluffy eggs that's so pleasant. It's always filling, satisfying, and make my morning more enjoyable.
I like to make fancy breakfast sandwich variations with buffalo sauce, bacon, and other additions, but this simple one with just 5 ingredients is always my most favorite.
It's so easy, delicious, and can be made in just about 5 minutes. If you want a healthy, nourishing, satisfying meal to start your day off right, then this gluten free breakfast sandwich is the recipe to make!
WHY IS THIS RECIPE HEALTHY?
This gluten free breakfast sandwich is SO healthy because it's a completely balanced meal that can be made in just 5 minutes. It has protein from the ham and eggs, carbs from the gluten free bagel, and fat from the cheese.
You can get all of the most important nutrients that your body needs in every single bite you take! Plus, you can make a bunch of these and store them in the fridge for easy grab and go meals to make your busy mornings LESS stressful.
WHAT YOU'LL NEED FOR A GLUTEN FREE BREAKFAST SANDWICH

Equipment:
- Toaster or air fryer
- Non-stick skillet
- Mixing bowl
- Whisk
- Spatula
Ingredients:
- Gluten free bagel: I used O'Dough's gluten free bagel thins
- Eggs: You can use 1 or 2 eggs depending on your personal preference
- Ham: I used Applegate Farms' ham slices
- Cheese: My favorite to use on a healthy breakfast sandwich is cheddar cheese
- Tomato: The tomato just adds a bite of freshness to lighten the whole dish
- Salt and pepper
HOW TO MAKE A GLUTEN FREE BREAKFAST SANDWICH
- Make your scrambled egg(s)
- Toast the gluten free bagel and lay a slice of cheddar cheese on the top half
- Place a slice of ham and a slice of tomato on top of the cheese
- Use a spatula to gently lay the cooked scrambled eggs on the bottom half of the gluten free bagel and flip the top half on top of the hot eggs
- Cut in half and enjoy!



TIPS FOR SUCCESS
- Don't over cook your scrambled eggs
- Toast your bagel in the air fryer if you don't have a toaster
- Lay the cheese on the bagel immediately after toasting so it can melt
- Make these dairy free by substituting the cheese with vegan cheese
- Cook more than one and keep them in the fridge for quick grab and go breakfasts
HEALTHY BREAKFAST SANDWICH VARIATIONS
- Pesto egg sandwich: Spread 1 tablespoon of pesto on the inside of your bagel and switch the cheddar with mozzarella cheese
- Turkey breakfast sandwich: Substitute the deli ham for smoked turkey slices
- Three cheese: Add 3 cheeses instead of just 1 variety! My favorites are American, cheddar, and pepper jack
- Make with a gluten free English muffin instead
- Add buffalo sauce for a spicy breakfast sandwich
- Top your sandwich with an over hard egg instead of scrambled

Yes, I never make my scrambled eggs with milk so all you'd have to do is substitute the cheddar cheese with a vegan cheese or leave it off entirely. You'd also want to check your bagel, most are dairy free but it's always better to be safe.
If you don't want to make it with ham, try adding turkey bacon, sausage, or turkey lunchmeat.

STORING AND REHEATING
To store any leftovers you'll want to tightly wrap the healthy breakfast sandwich in aluminum foil and keep it in the fridge for 3-4 days.
When you're ready to reheat your sandwich, keep it wrapped in aluminum foil and heat in the air fryer at 350 F for 4-5 minutes. Additionally, you can reheat it in the oven by cooking it at 350 F for 8-10 minutes wrapped in foil.

Ingredients
- 1 large egg
- 1 gluten free bagel thin
- 1 ounce of cheddar cheese
- 1 slice of deli ham
- 1 thick slice of tomato
- Pinch of salt and pepper
Instructions
- Make the scrambled eggs by whisking 1 or 2 eggs in a small mixing bowl with a pinch of salt and pepper
- Add the egg mixture to a non stick skillet that's been heating up over low heat on the stove
- Once the eggs begin to set, gently stir them around with a spatula until they're cooked
- In the meantime, toast your gluten free bagel thin
- When the bagel pops out of the toaster, place it onto a plate and immediately top one half with the cheddar cheese so it can melt
- Lay a slice of deli ham and a thick slice of tomato on top of the melted cheese
- Turn off the heat on the stove, and use a spatula to take the hot scrambled eggs out of the pan and place them on top of the slice of tomato
- Add the top half of your gluten free bagel thin and enjoy!
