Gluten Free Breakfast Sandwich

This gluten free breakfast sandwich is the best way to start your day! They're healthy, easy, and need just 5 ingredients. You can make a healthy breakfast sandwich in 5 minutes, or prepare a bunch and have easy grab and go breakfasts.

Ingredients

  • 1 large egg
  • 1 gluten free bagel thin
  • 1 ounce of cheddar cheese
  • 1 slice of deli ham
  • 1 thick slice of tomato
  • Pinch of salt and pepper

Instructions

  1. Make the scrambled eggs by whisking 1 or 2 eggs in a small mixing bowl with a pinch of salt and pepper
  2. Add the egg mixture to a non stick skillet that's been heating up over low heat on the stove
  3. Once the eggs begin to set, gently stir them around with a spatula until they're cooked
  4. In the meantime, toast your gluten free bagel thinΒ 
  5. When the bagel pops out of the toaster, place it onto a plate and immediately top one half with the cheddar cheese so it can melt
  6. Lay a slice of deli ham and a thick slice of tomato on top of the melted cheese
  7. Turn off the heat on the stove, and use a spatula to take the hot scrambled eggs out of the pan and place them on top of the slice of tomato
  8. Add the top half of your gluten free bagel thin and enjoy!

Notes

  • Don't over cook your scrambled eggs
  • Toast your bagel in the air fryer if you don't have a toaster
  • Lay the cheese on the bagel immediately after toasting so it can melt
  • Make these dairy free by substituting the cheese with vegan cheese
  • Cook more than one and keep them in the fridge for quick grab and go breakfasts
