Lime popsicles are a fantastic summer treat! They're super easy, need just 3 ingredients to make, and are entirely sugar free. These frozen lime pops are one of the most bright and refreshing desserts you can have on a hot summer day.

I've been on a citrus kick lately between the sweet lemonade popsicles, vibrant jerk chicken wings with lime, and now THESE easy lime popsicles.
Citrus is just such a refreshing and hydrating fruit to enjoy on these hot summer days, and these easy lime pops are no different. They're bright, fresh, full of flavor, and couldn't be easier to make.
You only need 3 ingredients, lime juice, monk fruit, and water to make these and they take about 10 minutes to prepare. I even like to make the popsicles at night so I can go to sleep and wake up to a frozen treat!

INGREDIENTS FOR LIME POPSICLES

- Lime Juice: Fresh squeezed is always best because it has a much brighter, less concentrated flavor. Here's a link to my favorite juicer so you can get every last drop!
- Monk Fruit: Monk fruit is by far my favorite non-sugar sweetener. I use it daily, and have found that Lakanto and PureCane are the best quality
- Water: This is used to dilute the lime syrup and make sure your popsicles aren't too tart!
HOW TO MAKE EASY LIME POPSICLES
- In a small pot, add your fresh squeezed lime juice and the monk fruit
- Place the pot on the stove over medium heat and stir frequently until the monk fruit is dissolved
- Once the monk fruit is dissolved into the lime juice, turn the heat off and pour the lime syrup into a large, glass measuring cup
- Add the water to the measuring cup, stir well, then carefully pour your lime popsicle mixture into your popsicle molds
- Pop the lids onto your popsicles and place them into the freezer to allow them to freeze completely. About 6-8 hours.



EXPERT TIPS
- Make this with fresh squeezed lime juice
- Substitute the monk fruit with regular white sugar
- A funnel or measuring cup with a spout makes filling the popsicle mold much easier
- Allow 6-8 hours for these to freeze completely
- Make these the night before
- Briefly run the outside of the popsicle mold under water to easily remove them
LIME POPSICLE VARIATIONS
- Add lime zest for decoration
- Replace half of the water with watermelon juice
- Sprinkle a dash of chili powder into the lime syrup for a sweet and spicy combo
- Place fresh cut strawberries into the popsicles before freezing

STORING LEFTOVERS
I always keep my popsicles in the mold in the freezer until I'm done with them.
If you want to use your popsicle mold for another recipe, you can remove the lime popsicles from the mold and immediately transfer them to a freezer safe plastic bag with a piece of parchment paper in between each one. Pop the bag into the freezer and pull one out as needed.
Popsicles will last in the freezer for up to 6 months.
FAQs
If you're having trouble getting the popsicles out of the mold, I recommend running the entire thing briefly under warm water and that should loosen the sides enough to remove them.
I always prefer to use fresh lime juice because the flavor it so much better. Bottled tends to be more concentrated which will make the flavor of these popsicles much more tart.
Limes are tough to squeeze without juicer, so I suggest investing in this hand held one! It's easy, inexpensive, and doesn't take up a lot of space.
No popsicle mold, no problem! You can make these the old fashioned way with paper cups and wooden popsicle sticks!
