Lime popsicles are the best frozen treat to enjoy this summer! They're easy, healthy, and made with just 3 ingredients. Best of all, these healthy lime pops are sugar free, making them a great dessert for kids!

Ingredients

  • 1/2 cup fresh squeezed lime juice
  • 1/2 cup monk fruit
  • 1 cup cold water

Instructions

  1. In a small pot, add your fresh squeezed lime juice and the monk fruit
  2. Place the pot on the stove over medium heat and stir frequently until the monk fruit is dissolved (about 5 minutes)
  3. Once the monk fruit is dissolved into the lime juice, turn the heat off and pour the lime syrup into a large, glass measuring cup
  4. Add the water to the measuring cup, stir well, then carefully pour your lime popsicle mixture into your popsicle molds
  5. Pop the lids onto your popsicles and place them into the freezer. Allow them to freeze completely, about 6-8 hours.

Notes

  • Make this with fresh squeezed lime juice
  • Substitute the monk fruit with regular white sugar
  • A funnel or measuring cup with a spout makes filling the popsicle mold much easier
  • Allow 6-8 hours for these to freeze completely
  • Make these the night before
  • Briefly run the outside of the popsicle mold under water to easily remove them
  • Store leftover in the freezer for up to 6 months
