Lemonade popsicles are the treat of the summer! They're easy, need 3 ingredients, and are completely sugar free. This easy lemon pop is the most refreshing dessert to enjoy on a hot summer day.

Who doesn't like lemonade? It's bright, sweet, and perfectly refreshing on a hot summer day. The only way it could get better is if it were frozen...oh wait- that's exactly what I did!
These lemonade popsicles are the most incredible treat! They're super fresh and sweet and take just minutes to prepare.
You only need 3 ingredients to make these and it takes less than 10 minutes until you're popping them into the freezer. I love to use this popsicle mold, but you can make these the old fashioned way in paper cups if you have to.
Popsicles truly are the epitome of a summer dessert and take me back to my childhood every time I eat one. If you're not in the mood for lemon, be sure to try lime popsicles, cherry popsicles, or creamy strawberry pops!
INGREDIENTS FOR LEMONADE POPSICLES

- Lemon Juice: I prefer to use fresh squeezed lemon juice because the flavor is much more bright and less tart. Here's my favorite kind of juicer.
- Monk Fruit: These popsicles are made with monk fruit so they're entirely sugar free! My favorite brand to use is Lakanto
- Water: Cold water is use to cut the sugar free lemon syrup so it's not so tart
Variations:
- Substitute the monk fruit with regular sugar if you don't have any
- Add fresh, sliced strawberries, raspberries, or blueberries to the popsicles
- Stir some rainbow sprinkles
- Once frozen, place on a baking sheet, drizzle with melted white chocolate, and refreeze to harden the chocolate
HOW TO MAKE LEMONADE POPSICLES
- In a medium size pot, add your lemon juice and monk fruit
- Place the pot on the stove over medium heat and cook until the monk fruit is dissolved, being sure to stir frequently
- Turn the heat off, and pour the lemon syrup into a large, glass measuring cup
- Add the water to the measuring cup, stir, then carefully pour your lemonade popsicle mixture into your popsicle molds
- Pop the lids onto your popsicles and place in the freezer to allow them to freeze completely. About 6-8 hours.




HOW TO PULL POPSICLES OUT OF THE MOLD
Once your lemonade popsicles are completely frozen, you can go ahead and remove them from the mold. If they do not come out easily when lightly tugged, I suggest running the mold quickly under hot water. That will release the sides and allow you to pull your popsicles right out and enjoy.

STORING LEFTOVER LEMONADE POPSICLES
Personally, I keep mine in the mold in the freezer. If you want to free up your popsicle mold, I suggest to remove the lemonade popsicles from the freezer and immediately transfer them to a freezer safe plastic bag with a piece of parchment paper between each popsicle. Refreeze and pull one out as needed.
Popsicles will stay good, if kept in the freezer, for up to 6 months.
FAQs
I always prefer to use fresh lemon juice when I can, however you can substitute with bottled if you want. You should know that because the juice in the bottle is concentrated the flavor is much more tart than fresh.
If you don't have a juicer all you have to do is microwave your lemon for 30 seconds to soften it, then cut in half and use the back of a spoon to press out all the juice. I suggest running the juice through a sieve afterwards to strain out any seeds and pulp.
No, you don't! If you don't have monk fruit you can substitute it with regular white sugar in a 1:1 ratio.
If you don't have a popsicle mold you can use paper cups and popsicle sticks. Fill the paper cups ¾ of the way full and place them into the freezer for an hour, after an hour stick the popsicle sticks into the cups, and let them freeze fully for another 6-7 hours.
