What Are Over Hard Eggs?
Over hard is a type of fried egg that is fried in a skillet until the whites are set and the yolk is completely cooked through and hard.
Choosing The Correct Pans and Eggs
PANS:
I always suggest using a stainless steel, cast iron, or a healthy non-toxic skillet to cook your eggs in. My preference is stainless steel, but it takes some practice to make sure nothing sticks. Here's a helpful video.
EGGS:
It's always best if you can get organic, pastured eggs. Usually, I use them fresh from our chickens, but you can also support your local farmers. If I'm buying them from the store I like the brand Vital Farms.
However, I know eggs are expensive nowadays so please know that any kind will work in this recipe.

Expert Tips

- Break the yolks with the spatula to make sure they cook all the way through
- The yolks will look puffed up once fully cooked through
- Room temperature eggs are less prone to sticking
- Substitute the ghee with butter or oil
- Add more fat if the pan seems dry

Should I Cook My Eggs In Oil Or Butter?
I always prefer to cook mine in ghee or butter because I prefer the taste. The ghee gives them a nice buttery flavor and keeps the whites softer.
Bacon grease is another wonderful option that adds a salty/smokey taste to the eggs. Oil would be my last choice because I've also found that it tends to give the egg whites a crispy texture and doesn't add flavor, however it is a good dairy free option.
How To Serve Over Hard Eggs
You can serve them with:
- Toast (regular or gluten free)
- English muffin/ bagel
- Breakfast meat- bacon, sausage, or ham
- Fruit salad
- Yogurt with granola
