Single Serve Banana Bread is my favorite way to use up that final browning banana sitting on the counter. You just need one overripe banana, some pantry staple ingredients, and 30 minutes. It's moist, full of banana flavor, and makes the perfect banana bread for one!

Key Ingredients and Substitutions

- Banana: The more overripe the better and sweeter your banana bread will be!
- Oil: You will need a neutral flavored oil like avocado (my go-to), canola, or vegetable.
- Maple syrup: making this recipe with maple syrup keeps it refined sugar free and also adds notes of warm flavor throughout. If you don't have maple syrup, you can use honey.
- Egg white: The egg white binds everything together and also helps it rise. It's best if you use a room temperature white because it mixes together much smoother.
- Flour: I only tested this recipe with all purpose flour, but you can try and substitute with a 1:1 gluten free flour blend that contains xanthan gum.
- Leavening agents: You will need both baking soda and baking powder. Baking soda aids in the rise and gives this banana bread that nice brown color, baking powder helps keep it fluffy.
- Cinnamon: I like to add a pinch of ground cinnamon for some warmth and extra flavor.
How To Make A Single Serve Banana Bread
STEP ONE: Preheat your oven to 350°F and line 1 jumbo muffin tin cavity with a paper liner. (or a square of parchment paper)
STEP TWO: In a medium sized mixing bowl, stir together mashed banana, oil, maple syrup, egg white, and a splash of vanilla extract. Mix until well combined.
STEP THREE: Add the dry ingredients into the wet ingredients and fold it all together until just combined.
STEP FOUR: Carefully pour the banana bread batter into your prepared muffin tin and bake for 23-25 minutes, or until a toothpick inserted into the center comes out clean.
STEP FIVE: Remove the pan from the oven and allow your single serve banana bread to cool for at least 20 minutes before enjoying.
Expert Baking Tips
- The more overripe the better: Banana bread is always best when you use super overripe bananas. They get sweeter as they ripen and also have more "banana" flavor!
- Use room temperature ingredients: This goes with most baked goods, room temperature ingredients combine together much smoother and result in a better final product.
- Don't overmix: Lumpy banana bread batter is OK! It bakes up smooth and won't be tough or dense.
- Careful not to over bake: Once a toothpick comes out clean, take your single serve banana bread out of the oven. Residual heat will continue cooking it and you don't want it to get dry.
- Make 2 smaller muffins: If one large banana bread isn't your style, try baking it in 2 regular sized muffin tins for 17-19 minutes instead.

- Blueberries: 2 tablespoons of fresh blueberries is a fun, fruity twist!
Recipe Variations
Gluten free: Substitute all purpose flour with a 1:1 gluten free flour blend that contains xanthan gum.
Dairy free: This recipe is actually naturally dairy free since it's made with oil instead of butter!
Egg free: You can try substituting the egg white with a flax egg. Just mix 1 tablespoon of ground flaxseed with 2 tablespoons of warm water and let it sit for 10 minutes before adding in remaining ingredients.
Storing Instructions
Store any leftover banana bread for one in an airtight container at room temperature for up to 4 days.
I do not recommend freezing it because it tends to dry out fairly quickly.

I have not tried it, nor do I think the muffin tin would fit. If you would like to attempt it, bake in an 8 ounce ramekin at 350°F for 12-15 minutes, add 1-2 minutes after that until it is finished.
Yes, if you'd like 2 smaller servings, feel free to divide the batter between 2 regular sized muffin tins.
Bake for 17-19 minutes to start and add 1-2 minutes after that until baked through.
I have not tested it, but you should be able to substitute the all purpose flour with a 1:1 gluten free flour blend that contains xanthan gum.
If you don't have a jumbo muffin pan, don't worry! You can still make banana bread for one in a ramekin.
I recommend an 8 ounce ramekin because it's close to the same size.
A quick note about baking in grams...
You may notice that most of my newer recipes are listed in grams instead of cups. That's because it's really the most accurate way to measure and bake exceptional treats every time with little room for error.
I highly suggest investing in a $10 kitchen scale. It's really worth it!
