Single Serve Banana Bread

Single Serve Banana Bread is my favorite way to use up that final browning banana sitting on the counter. You just need one overripe banana, some pantry staple ingredients, and 30 minutes. It's moist, full of banana flavor, and makes the perfect banana bread for one!

Ingredients

  • 75g mashed banana (overripe is best)
  • 30g neutral flavored oil- avocado, canola, vegetable
  • 30g maple syrup
  • 1/4 teaspoon vanilla extract
  • 1 large egg white- room temperature
  • 50g all purpose flour
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon baking powder
  • 1/8 teaspoon ground cinnamon
  • 1/2 tablespoon cinnamon sugar* (optional)

Instructions

  1. Preheat oven to 350°F and line 1 jumbo muffin tin with a paper liner (or square of parchment paper)
  2. In a medium sized mixing bowl, stir together mashed banana, oil, maple syrup, vanilla extract, and the egg white. Mix until well combined.
  3. Next, to the wet ingredients, add the flour, baking soda, baking powder, and ground cinnamon. Gently fold all ingredients until just combined.
  4. Pour the banana bread batter into your prepared muffin tin, sprinkle over cinnamon sugar if desired, and bake for 23-25 minutes, or until a toothpick inserted into the center comes out clean.
  5. Carefully remove your single serve banana bread from the oven, let it cool at least 20 minutes, then enjoy!

Notes

  • The more overripe the better: Banana bread is always best when you use super overripe bananas. They get sweeter as they ripen and also have more "banana" flavor!
  • Use room temperature ingredients: This goes with most baked goods, room temperature ingredients combine together much smoother and result in a better final product.
  • Don't overmix: Lumpy banana bread batter is OK! It bakes up smooth and won't be tough or dense.
  • Careful not to over bake: Once a toothpick comes out clean, take your single serve banana bread out of the oven. Residual heat will continue cooking it and you don't want it to get dry.
  • Make 2 smaller muffins: If one large banana bread isn't your style, try baking it in 2 regular sized muffin tins for 17-19 minutes instead.
  • Add fun mix-ins: I've listed a few ideas below, but have fun and get creative with your personal banana bread!
  • Storing: Keep leftovers in an airtight container at room temperature for up to 4 days.

*to make cinnamon sugar, mix 1/2 tablespoon of sugar with 1/2 teaspoon of ground cinnamon.
