INGREDIENTS FOR BUFFALO CHICKEN QUESADILLAS

- Tortillas: Use your favorite! I usually use flour tortillas, but Siete Foods has great options for Gluten and Grain Free
- Chicken Breast: Chicken breast is a fantastic source of protein with over 30 grams of protein per 100 grams of chicken
- Onion: I used a small yellow onion to make these buffalo chicken quesadillas. Yellow onions are best for cooking, but you can substitute with a white onion or a shallot
- Buffalo Sauce: My favorite store bought brand to use is Primal Kitchen, but you can also make your own!
- Cheese: Cheese is a good source of healthy fats which your brain needs, and also fats help send cues that you're feeling full. Try and avoid pre-shredded cheese though, they tend to have unnecessary ingredients. P.S. You can use dairy free cheese and make a dairy free buffalo chicken quesadilla!
HOW TO MAKE EASY, HEALTHY BUFFALO CHICKEN QUESADILLAS






- Heat a large pan over medium heat, and add 1 teaspoon of olive oil or avocado oil to the pan if it's not a non-stick pan
- Dice the raw chicken into bite size pieces. Add the cut up chicken and diced onion to the heated pan, use a wooden spoon or rubber spatula to move the chicken around in the pan to ensure it is cooked through
- Once the chicken is cooked and the onion is soft, about 5-8 minutes, turn the heat to low and pour in the buffalo sauce and cheese.
- When the cheese is melted and the buffalo sauce is coating all the chicken, turn the heat off and remove the pan from the stove.
- Set your tortillas out and divide the filling evenly between two of them, then top with another tortilla, and wash the pan that the filling was in.
- Place the clean pan back onto the stove and heat it over medium/ low heat. Spray one side of the quesadilla with cooking spray or smear a bit of butter on it, place that side of the quesadilla down in the pan and let it cook and get golden and crispy. This will take about 2-3 minutes.
- While the one side of the buffalo chicken quesadilla is cooking, spray or smear butter on the other side. After 3-4 minutes, use a rubber spatula to carefully flip the quesadilla and let the other side get crispy.
- Cook another 2-3 minutes on that side then use the same spatula to carefully remove the healthy quesadilla and put it on a plate. Cut into halves or quarters and allow it to cool for while you cook the second buffalo chicken quesadilla.
- Repeat steps 6-8 on the second quesadilla and enjoy!
