Gluten free bread crumbs are an easy, 20 minute recipe I love to make when I have stale bread hanging around. There's so many ways you can use them, plus the recipe only needs 2 ingredients!

Simple grind the bread into crumbs, toss with oil, and toast until crisp and golden brown. That's it!

You can use these homemade bread crumbs in meatballs, to make chicken tenders or cutlets or even for cheesy homemade mozzarella sticks!

  • Gluten free bread: Any kind of white gluten free bread will work. It can be stale sandwich bread, sourdough bread, or even a baguette. You just don't want a gluten free bread that's made with seeds.
  • Oil: I prefer to use avocado oil because it has a neutral flavor, but olive oil or coconut oil will also work.

How To Make Gluten Free Bread Crumbs

1. Preheat your oven to 350 degrees F and line a baking sheet with parchment paper

2. Place torn gluten free bread into a food processor and pulse it until you get fine crumbs

3. In a large mixing bowl, mix the bread crumbs with oil and a pinch of salt, until coated well

4. Spread the crumbs out onto your prepared baking sheet and bake for 10-12 minutes, or until golden brown and crunchy

5. Let the bread crumbs cool completely, then store in an airtight jar in a cool, dry place for up to 3 weeks

Storing Instructions

STORING: Store your bread crumbs in an airtight container in a cool, dry place. They will stay good, if stored properly, for up to 3 weeks.

FREEZING: You can also freeze your bread crumbs if you want them to last longer. Place the cooled crumbs into a freezer safe bag and place into the freezer. They'll stay good for up to 3 months.

Frequently Asked Questions

What breadcrumbs are gluten free?

There's quite a few brands out there that sell gluten free bread crumbs. My favorite store-bought variety are Ian's, but Aleia's, 4C, and Schar are all great as well.

Is Panko gluten free?

Regular Panko is not gluten free, but you can usually find gluten free Panko in the same aisle at the store.

What is a gluten free alternative to bread crumbs?

You can also use crushed gluten free crackers or gluten free cornflakes, almond flour, or coarsely ground oats.

Do I need to cut the crusts of the bread off to make breadcrumbs?

Not for regular bread crumbs, but if you want to make gluten free Panko you'll need to remove the crust.

  2. Any oil: You can use any kind of oil you'd like. Avocado oil (my favorite), olive oil, melted coconut oil, or even melted butter all work.
  3. Bake until golden: Baking time may vary between ovens, so you want to look for the crumbs to be evenly golden brown and toasted
  4. Make Panko: If you want homemade gluten free Panko, just remove the crusts first
  5. Seasoned bread crumbs: You can add some Italian seasonings, garlic powder, salt, and pepper if you want to season these

  • To make Gluten Free Panko, use gluten free white bread and remove the crusts first. Pulse only 1 or 2 times in the food processor so you have a coarse crumb texture, then follow directions 3-5 listed above
  • Stale bread: This is a great recipe to make and use up stale bread so you're not throwing it out and wasting
  • Any oil: You can use any kind of oil you'd like. Avocado oil (my favorite), olive oil, melted coconut oil, or even melted butter all work.

    This recipe is great! A wonderful use for stale bread and I love that there’s no weird ingredients in them.
