INGREDIENTS NEEDED TO MAKE THIS SHEET PAN SUPPER

- Chicken apple sausage: I LOVE Applegate Farms products, or I also use Dietz and Watson Chicken Apple Sausage
- Sweet potatoes: I recommend opting for organic, if you can! But no worries if not 🙂
- Large onion: I use a yellow onion
- Broccoli: fresh or frozen will work
- Apple: My favorite kind to use is any crunchy apple, so Honeycrisp and Pink Lady are my go to, but I've also used Fuji
- Balsamic vinegar: make sure it's actual vinegar and not balsamic reduction
- Spices: Salt, pepper, and garlic powder
HOW TO MAKE CHICKEN SAUSAGE SHEET PAN

- Preheat oven to 375 degrees F (190 degrees C) and line a sheet pan with parchment paper
- With the skin on, chop up the sweet potatoes into ¾ inch cubes
- Place the sweet potatoes on the parchment lined sheet pan and spray lightly with avocado oil
- Roast the sweet potatoes for 20 minutes and in the meantime prepare the other ingredients
- Cut the onions into ¼ inch slices, cut the broccoli into small florets, and dice the apples into ½ inch cubes
- Once the potatoes have roasted for 20 minutes, remove them from the oven and add the additional prepared vegetables. Pour over the balsamic vinegar, season with salt, pepper, and garlic powder and use a spatula to mix everything together. Spread everything out into an even layer on the sheet pan and return to the oven for 10 minutes.
- While the other balsamic, fall vegetables are roasting, slice the chicken sausage
- When your timer goes off add the chicken sausage to the sheet pan of vegetables and roast for an additional 8-10 minutes.
- Pull the pan out of the oven and enjoy!

RECIPE TIPS
- Roast sweet potatoes first
- I used pre-cooked chicken sausage, if using raw, add it with the second round of vegetables
- Try to use fresh vegetables, frozen will result in a more steamed dinner instead of crisp, caramelized roasted vegetables
- Prepare all ingredients beforehand so you can just add them quickly, as needed
- Use a crunchy apple like Honeycrisp or Pink Lady
- Don't use a Granny Smith Apple, it's too sour for a delicious sheet pan supper like this
- Make sure you're using balsamic vinegar and not balsamic reduction
- Save leftovers from this weeknight meal for easy lunches throughout the week!
FAQs
Sure you can! They'll still roast for the same amount of time.
I use pre-cooked chicken apple sausage because the sweet notes of it play well with the roasted veggies and balsamic vinegar, but you can use a different flavor of chicken sausage if you'd like.
I like using a sweet, crunchy apple like Honeycrisp, Pink Lady, or Fuji. Any kind that is sour or has a thick skin will not work well.

This meal was sooo yummy! I even had leftovers for lunch the next day. I used raw chicken sausage, so I just put it on the pan when I put the rest of the veggies on. It turned out perfectly!
