Easy Chicken Apple Sausage Sheet Pan

This easy chicken apple sausage sheet pan makes the simplest, healthiest, and tastiest weeknight meal everyone will love! Simply chop up your vegetables, roast them, add chicken sausage, and volia! Quick, easy, healthy dinner for the whole family!

Ingredients

  • 3 cups Cubed sweet potatoes ((about 2 medium size))
  • 1 Large onion- sliced
  • 3 cups Chopped broccoli
  • 1 Large apple
  • 1/3 cup Balsamic vinegar
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Pepper
  • 1/2 Teaspoon Garlic powder
  • 4 Thawed chicken apple sausages- sliced

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C) and line a sheet pan with parchment paper
  2. Cut sweet potatoes into 1 inch cubes and place them in a single layer on your prepared sheet pan
  3. Spray the sweet potatoes lightly with avocado oil spray and place in preheated oven. Roast for 20 minutes
  4. While the sweet potatoes are roasting, prepare your other ingredients.
  5. Slice the onion into 1/4 inch slices, chop the broccoli, dice the apple into 1/2 inch cubes, and slice up the chicken sausages into rings
  6. Once the sweet potatoes have roasted for 20 minutes, pull the sheet pan out of the oven and add the onion slices, chopped broccoli, diced apple, balsamic vinegar, salt, pepper, and garlic powder
  7. Stir everything around on the sheet pan and place back into the oven for 15 minutes
  8. When your timer goes off, pull the sheet pan back out of the oven and add the cut chicken sausages. Return the pan to the oven for another 8-10 minutes.
  9. Now that everything is roasted and heated through, pull the sheet pan out of the oven, serve, and enjoy!
