Whole30 buffalo chicken salad is a simple, quick meal that's every bit as yummy as it sounds. Juicy chicken breast chopped up, tossed with sweet diced apples, onions, and celery seed then all mixed together with creamy Primal Kitchen buffalo sauce.
You can enjoy it as a lettuce wrap, salad, or on it's own for a healthy lunch or dinner. The best part about this is you can make a big batch of it at the beginning of the week and enjoy quick lunches throughout the week.

INGREDIENTS TO MAKE WHOLE 30BUFFALO CHICKEN SALAD

- Cooked chicken breast: I roast my chicken breasts in the oven
- Diced apples: Use a crisp apple like Pink Lady or Honeycrisp
- Diced onion: White onion is what I prefer, but red onion will also be good in this chicken salad
- Buffalo sauce: My favorite to buy is Primal Kitchen if I'm not making my own
- Celery seed: You can omit and use diced celery in place of
HOW TO MAKE WHOLE30 BUFFALO CHICKEN SALAD
- Start by chopping up all your ingredients. On a cutting board, with a sharp knife, cut the cooked chicken breast into cubes, dice the apple, and finely dice the onion
- Place the chicken, apples, onions, celery seed, and salt into a large mixing bowl. Use a wooden spoon to combine everything
- Next, pour the Primal Kitchen buffalo sauce into the mixing bowl, and gently toss all ingredients together until it's well mixed
- Serve immediately, or place into the fridge until you're ready to enjoy


HOW TO ROAST CHICKEN BREAST
INGREDIENTS:
- 1 pound chicken breast
- Salt and pepper
DIRECTIONS:
- Preheat oven to 350 degrees F and line a quarter sheet pan with parchment paper
- Place the chicken breasts on the parchment lined pan and season the outside with salt and pepper
- Roast the chicken for 25- 30 minutes, or until it reaches an internal temperature of 165 degrees F
- Pull the sheet pan out of the oven and let the chicken cool completely before chopping it up to make the chicken salad

SUBSTITUTIONS AND VARIATIONS
Substitutions:
- Chicken breast: This is great with any kind of leftover chicken, or even leftover turkey
- Onion: I used a yellow onion, but red onion or a shallot will also work
- Celery seed: Substitute with 2 tablespoons of fresh, finely diced celery
Variations of Whole30 Buffalo Chicken Salad:
- Eliminate the apples: I personally like the sweet and spicy combo, but you can take them out all together if you don't like them.
- Use another protein: Turkey or shrimp is also good
- Make this with Primal Kitchen BBQ sauce if you're not into spicy food
STORING WHOLE30 BUFFALO CHICKEN SALAD
Like most chicken salads, this healthy buffalo chicken salad is a great make ahead recipe since the flavor will continue to develop the longer it sits.
To store, keep it in an airtight container in the fridge for up to 5 days. You can easily pull it out of the fridge and add it to a lettuce wrap, a salad, or scoop it into a bowl and enjoy!

Ingredients
- 3 cups Cooked, chopped chicken breast ((about 1 pound raw chicken))
- ¼ cup Chopped apple
- ¼ cup Finely Diced onion
- ½ Teaspoon Celery seed
- ¼ Teaspoon Kosher salt

Instructions
