As the temperature is gradually heating up, I am on the hunt for a new treat to cool off. These healthy dark chocolate covered raspberries are sweet, frozen, and so healthy! You only need 3 simple ingredients, fresh raspberries, white chocolate chips, and dark chocolate in order to make this quick and easy treat. Simply stuff the fresh raspberries with a white chocolate chip, dip in melted dark chocolate, and freeze till the chocolate is hard. It's so easy that your kids could make it!
These healthy little treats are great for an after school snack, mid-morning pick me up, or even enjoy as a healthy dessert when that sweet craving hits. You can make them in less than 5 minutes and they only take about 15 minutes to freeze, so all in all, you have a DELICIOUS, perfect treat in 20 minutes! Much like my 5 ingredient banana muffins, this healthy dessert requires minimal ingredients, minimal time, and minimal effort. So since they're SO easy, I think it's time you give 'em a try!

WHAT YOU NEEED FOR DARK CHOCOLATE RASPBERRIES

- Fresh raspberries: I like to go into the grocery store and pick out the biggest, freshest berries for optimal flavor. You also want them to be room temperature when you cover them, so take the berries out of the fridge about 20 minutes before you plan on coating them.
- White chocolate chips: I recommend the Lily's White Chocolate Chips because they're sweetened with stevia so there's little added sugar.
- Dark chocolate: For this recipe, I chopped up a Lily's Dark Chocolate Bar and melted it, but you could also use their dark chocolate chips. Or, if you don't like dark chocolate, milk chocolate chips or more white chocolate chips would be delicious!
- Coconut oil: This is only needed if you feel the chocolate needs to be thinned out more.
HOW TO COAT RASPBERRIES IN DARK CHOCOALTE




- Chop up the dark chocolate and melt it in the microwave (30 seconds at a time) or over low heat in a small pot on the stove *add coconut oil as needed*
- While the chocolate is melting, take a room temperature raspberry, stuff it with a white chocolate chip, and place on a parchment lined baking sheet. Repeat for each berry
- Once the chocolate is melted, take the smooth dark chocolate and dip the top of a stuffed berry into it. Place the chocolate covered raspberry back onto the baking sheet and repeat until all the berries are coated. (alternatively, you could spoon over the melted chocolate but it does make more of a mess)
- Put the baking sheet into the freezer and allow the chocolate to harden for about 15 minutes. Once hard, share (or not) and enjoy!

- You can easily scale this recipe up and make a large batch. Melt as much chocolate as you want, and just keep dipping raspberries till you run out!

- If you don't like dark chocolate, feel free to melt milk chocolate, semi-sweet, or even white chocolate
- The white chocolate chip stuffing is optional, but highly recommended
- I found that dipping the tops of the berries was easiest, but you can spoon over the melted chocolate if you'd rather. It is more of a mess though.
- For an even more healthy, but indulgent treat experience, I recommend pairing these frozen dark chocolate raspberries with a hot cup of strawberry hot cocoa

I like them to be at room temperature because it makes the dipping process go smoother, and if you decide not to freeze them and let the chocolate harden naturally, the berries won't have condensation if they're left out. In other words, it won't make them sweat 🙂
Well, you can't stuff any others with chocolate chips, but strawberries, blueberries, bananas, cherries, and maybe even blackberries would all be good coated in dark chocolate!
Yes! While I would hesitate to call most chocolate coated things "healthy" from a nutritional standpoint (remember that's not all that counts though!) this easy recipe is surprisingly healthy!
Since I used Lily's chocolate, it's sweetened with stevia so there's very little added sugar there and the sugar from raspberries is good, natural sugar.

These are amazing!! I had raspberries and was craving a healthy chocolate raspberry dessert so I googled that and found this recipe. I happened to have Ghirardelli bittersweet chocolate baking chips and Ghirardelli white chocolate chips in my pantry. I followed the recipe using those ingredients and they came out exactly as described. I love Tru Fru but these were even better because of the juicy fresh raspberry between the 2 kinds of chocolate. So quick and easy to make and totally satisfying!! Will make them again and again!
