Do you love muffins as much as I do? Blueberry, chocolate chip, doesn't matter- I like them. Now, you can have muffins in just 20 minutes with these easy, 5 ingredient banana bread muffins! You won't believe how incredibly moist, tender, and fluffy these muffins are; but what's even more amazing is that you only need 5 ingredients! Yes, you read that right- F-I-V-E! Don't believe me? These 20 minute muffins are perfect for meal prepping at the beginning of the week for a quick, on-the-go breakfast. 5 INGREDIENTS FOR BANANA BREAD MUFFINS

  1. Bananas: Be sure your bananas are ripe and spotty. Under ripe bananas don't cut it in this recipe
  2. Coconut Sugar: You can use regular sugar or brown sugar if you don't have coconut sugar
  3. Oat Flour: Oat flour is naturally gluten free, and adds a warm, nutty note to this healthy, vegan banana bread (or this DELICIOUS lemon blackberry cake)
  4. Baking Soda: Baking soda is necessary for rising the banana bread muffins so they're not too dense, and also browns the outside so they have a nice color
  5. Avocado Oil: You need fat to create a soft, fluffy texture in the muffins. You can use melted coconut oil in place of avocado oil if you don't have any

HOW TO MAKE BANANA BREAD MUFFINS WITH 5 INGREDIENTS

  1. Preheat your oven to 350 degrees F and grease a muffin tin with non-stick cooking spray
  2. In a large bowl mash the ripe bananas
  3. Add the coconut sugar, oat flour, baking soda, and avocado oil to the large bowl of mashed banana and mix with a wooden spoon or rubber spatula until everything is well combined
  4. Use a cookie scoop to portion out the 5 ingredient banana bread batter into your prepared muffin tin. Fill each cup about ¾ of the way full
  5. Bake the vegan banana bread muffins for 13-15 minutes, or until a toothpick inserted into the center comes out clean
  6. Remove the muffins from the oven and allow to cool

  • You can replace the coconut sugar with regular sugar or brown sugar

  • You can sift the oat flour if you want. The muffins will be a little fluffier, but I generally skip doing this and they still turn out GREAT
