Healthy Dark Chocolate Raspberries

These easy dark chocolate raspberries will quickly become your go-to snack. With only 3 ingredients and les than 20 minutes, this healthy recipe sure is a treat!

Ingredients

  • 15-20 Fresh Raspberries (room temperature)
  • 15-20 White Chocolate Chips
  • 1/3 cup Chopped Dark Chocolate
  • Coconut oil- as needed

Instructions

  1. Chop up the dark chocolate and melt it in the microwave (30 seconds at a time) or over low heat in a small pot on the stove *add coconut oil as needed*
  2. While the chocolate is melting, take a room temperature raspberry, stuff it with a white chocolate chip, and place on a parchment lined baking sheet. Repeat for each berry
  3. Once the chocolate is melted, dip the top of a stuffed berry into it. Place the chocolate covered raspberry back onto the baking sheet and repeat until all the berries are coated. (alternatively, you could spoon over the melted chocolate but it does make more of a mess)
  4. Put the baking sheet into the freezer and allow the chocolate to harden for about 15 minutes

Notes

  • Calories calculated are an estimate
  • You can easily scale this recipe up and make a large batch. Melt as much chocolate as you want, and just keep dipping raspberries till you run out!
  • This is a great treat to keep stocked in the freezer (like the Tru Fru raspberries that were inspiration)
  • If you don't like dark chocolate, feel free to melt milk chocolate, semi-sweet, or even white chocolate
  • The white chocolate chip stuffing is optional, but highly recommended
  • Store leftovers in an airtight container in the freezer for 1-2 months
