Ingredients Needed

- Strawberries: You CANNOT use frozen strawberries, they have to be fresh. Look for medium sized berries with bright green leaves and very little white on them.
- Dark chocolate: Don't use chocolate chips. Use dark chocolate melting wafers, dark chocolate baking bar, or your favorite dark chocolate candy bar.
- White chocolate: You should use either white chocolate melting wafer or a white chocolate baking bar.
- Decorations: This is where things get fun! You can finish your berries with finely chopped nuts, desiccated coconut, Valentine's Day sprinkles, or a drizzle of colored chocolate. The options are endless!
- Coconut oil: A little coconut oil may be necessary to thin out the chocolate a bit.
How To Prep The Strawberries
First, you'll need to wash the strawberries. Personally, I do it in a large bowl of water that contains a splash of white vinegar and about 1 tablespoon of baking soda.
Let them soak in the bowl for about 5 minutes, then drain and rinse thoroughly.
Set the strawberries in a single layer on a paper towel or tea towel and allow them time to dry thoroughly.
How To Make A Chocolate Covered Strawberry Bouquet At Home
STEP ONE: Take a wooden skewer or cake pop stick and gently push it into the stem end of a strawberry. The stick should be pushed about halfway into the strawberry to secure it.
STEP TWO: Repeat step one with remaining strawberries until they all have sticks in them.
STEP THREE: In a microwave safe bowl, melt the dark chocolate and ½ teaspoon of coconut oil for 30 seconds at a time, stirring in between each interval until smooth. (Don't microwave for more than 90 seconds)
STEP FOUR: Working quickly, hold the strawberry by the stick and dip ¾ of it into the melted dark chocolate, then lay it on a parchment lined baking sheet to harden completely.
STEP FIVE: Repeat step four with half of the skewered strawberries.
STEP SIX: In another microwave safe bowl, melt the white chocolate with ½ teaspoon of coconut oil. Heat for 30 seconds at a time, stirring between each interval until smooth. (Don't microwave for more than 90 seconds)
STEP SEVEN: Dip the remaining half of the strawberries into the white chocolate, following the same method as directed in step four.
STEP EIGHT: Decorate the strawberries with a fancy chocolate drizzle or sprinkles and allow to harden.
STEP NINE: Once the strawberries are completely hardened, you can arrange them in your vase. If your vase is wide mouth, I recommend placing a bit of floral foam in the bottom to make arranging easier. Fill the vase with chocolate candies to cover the foam if you want!
STEP TEN: Tie a ribbon around the vase, add a little card, and deliver your valentine.
Decoration Ideas
- Sprinkles: Go to your local craft store and check out what seasonal sprinkles they have!
- Chopped nuts: Finely chop peanuts or pistachios for a crunchy topping.
- Desiccated coconut: Use this over shredded coconut, it's much finer and easer to eat.
- Mini chocolate chips: You could sprinkle a few mini chocolate chips on the outside for extra chocolate!
- Chocolate drizzle: You can use extra chocolate for a fancy drizzle once everything has hardened.
*please note, if decorating with sprinkles, nuts, coconut, or mini chocolate chips, it needs to be done BEFORE the chocolate has completely hardened*
Expert Tips
- Use room temperature strawberries: Don't use strawberries that have come directly from the fridge. Take them out about an hour before you plan on using so that they can come to room temperature to prevent the chocolate from cracking.
- Dry strawberries thoroughly: On that same note, it's important to make these with really dry strawberries. Either dry with a paper towel or absorbent tea towel to remove any water from washing before you dip them.
- Use good quality chocolate: Chocolate chips are not great for melting. I recommend using Ghirardelli chocolate wafers or another brand of chocolate melting wafer.
- Work quickly: You will need to work quickly before the chocolate begins to harden. Try and have everything prepped beforehand so you're ready to go
- Use long enough skewers: Choose your vase first, then measure out the sticks you're planning on using. Nothing worse than dipping all your berries and realizing the vase is too tall!
