What Is White Chocolate?
What exactly is white chocolate? Is white chocolate actually chocolate? These are great questions that I'd be happy to answer for you!
White chocolate was invented in 1936 by Nestle as a way to use up the excess milk powder that had been made for soldiers in WWI. It doesn't contain any cocoa solids or cocoa nibs which give chocolate that rich color, but instead is made with sugar and cocoa butter.
By legal definition, all white chocolate must contain at least 20% cocoa butter. So as long as a brand or company meets that requirement it is considered "real chocolate."
There are some companies out there that don't meet that legal amount and therefore cannot label their product as "chocolate"; for example, Hershey's Cookies 'n' Creme. Just be sure to read the ingredient label before purchasing if you're unsure!
What You Need

Equipment:
- Microwave safe bowl or double boiler
- Parchment lined baking sheet
Ingredients:
- Strawberries: I like to buy large strawberries just for these when I'm planning on giving them away! However, any size of FRESH strawberries will work.
- White Chocolate: My favorite to use are Ghirardelli's white chocolate melting wafers. They're always smooth and harden quickly.
How To Make White Chocolate Covered Strawberries
1. In a microwave safe bowl, melt white chocolate for 30 seconds at a time, stirring in between each interval until smooth

2. Hold your strawberry by the stem and dip it ¾ of the way into the melted white chocolate

3. Set on a parchment lined baking sheet to harden, and repeat step 2 with remaining strawberries

Expert Tips For Making White Chocolate Covered Strawberries
- Room temperature berries: You want the strawberries to be at room temperature to prevent the chocolate from cracking as well as helping it to stick. the condensation that can build up from the rapid change in temperature isn't good for the chocolate.
- DRY strawberries: On that same note, it's important to make these with really dry strawberries. Either dry with a paper towel or absorbent tea towel to remove any water before dipping.
- Right kind of white chocolate: White chocolate chips are not meant to be melted down and used as a coating. You'll want white chocolate melting wafers or even a baking chocolate bar for these white chocolate strawberries.
- Work quickly: You will want to work quickly before the chocolate begins to harden. I suggest prepping everything beforehand so you're ready to go.
- Toppings: Get creative with the decorations! You can finish with sprinkles, nonpareils, or even crushed Oreos. You could also finish with a drizzle of dark chocolate for a bold, yet elegant look.
How To Store White Chocolate Strawberries
The best way to store white chocolate strawberries is in an airtight container in the fridge.
You can also freeze them for up to 3 months in an airtight container lined with parchment paper, just don't stack them!

How Long Do Chocolate Dipped Strawberries Last?
Chocolate covered strawberries are best if enjoyed within 2 days. They will last up to 5 if stored properly in the fridge, but for the best flavor eat them within 2 days of making.
