INGREDIENTS FOR CHOCOLATE CHIP OAT FLOUR COOKIES

- Butter: I always bake with salted butter, and my favorite brand is Plugra or Kerry Gold
- Brown sugar: This gives the cookies a richer, more caramelly, flavor. I always use light brown sugar
- Vanilla extract: Always add vanilla extract to cookies to boost the flavor
- Eggs: Unless otherwise stated, use large eggs when baking
- Oat flour: I prefer to buy oat flour because I find my baked goods turn out better. I like to use Bob's Red Mill Certified Gluten Free Oat Flour
- Salt and Cinnamon: Both of these spices help to enhance the flavor of the cookies
- Chocolate Chips: Any kind you like will work great
SUBSTITUTIONS:
- Butter: Use vegan butter instead to make these dairy free
- Brown sugar: You can substitute with an equal amount of coconut sugar or dark brown sugar
- Cinnamon: Leave it out entirely
- Chocolate chips: Chopping up a chocolate bar is a fantastic way to elevate these
HOW TO SUBSTITUTE OAT FLOUR FOR WHITE FLOUR
When substituting oat flour for all purpose flour you want to do the swap based on weight, not by volume. Oat flour is much lighter than white flour, so a simple 1:1, or cup for cup, ratio won't work.
I suggest using a scale and weighing your oat flour so you know you're using enough. Typically, 1 cup of all purpose flour equals 1 ⅓ cup of oat flour, but a scale is a MUCH more accurate way of measuring.
It is important to note that oat flour CANNOT be substituted in every baking recipe. Since it is gluten free, recipes like yeasted breads and certain cakes that rely on the formation of gluten for structure will be baking fails if you try and substitute with oat flour.
If you must eat gluten free, look for recipes like this one that are specifically designed to be made with oat flour.
HOW TO MAKE OAT FLOUR:
If you're in the middle of baking and realize you ran out of oat flour, don't worry! You can make some very simply by blending up rolled oats in a food processor until they reach a flour-like consistency. Once you have a flour, I like to sift mine to make sure there's no chunks that got missed.

WHY I RECOMMEND BUYING OAT FLOUR
While it's ok to use homemade oat flour in a pinch, I find that my cookies don't turn out as well with homemade. I like to use Bob's Red Mill Oat Flour because I consistently get a good cookie every time I bake.
With homemade oat flour, sometimes the texture is grainier, the cookies spread too much, or the taste is a little more muted.
HOW TO MAKE CHOCOLATE CHIP OAT FLOUR COOKIES
- In a large mixing bowl, cream together your softened butter and brown sugar on high speed until light and pale in color
- Add the egg and vanilla extract to the butter, and continue to beat on high until well mixed
- Next, you're going to add the oat flour, baking soda, salt, and cinnamon to the wet ingredients and slowly mix on low speed until just combined
- Finally, gently fold in the chopped chocolate with a rubber spatula then place the chocolate chip oat flour cookie dough into the fridge for 30 minutes to chill
- About 10 minutes before your cookie dough is done chilling preheat the oven to 350 degrees F and line 2 baking sheets with parchment paper
- Use a 2 tablespoon cookie scoop to scoop out the chilled dough onto the prepared baking sheets, making sure to leave 2 inches between each cookie
- Place the baking sheets into the oven and bake for 8-10 minutes until the edges are slightly golden brown
- Carefully take the trays out of the oven and let the cookies cool on them for 5-7 minutes before transferring to a wire rack to cool completely

To freeze the cookies you want to let them cool completely first, then wrap them individually in plastic wrap, and place into a freezer safe bag. The cookies will last in the freezer for up to 3 months.
