These chocolate chip oat flour cookies are the best! Naturally gluten free, these delicious cookies are also extremely easy, made with pantry staples, and bake in just 10 minutes. You'll never need another cookie recipe again after you try these.

Ingredients

  • 1 stick softened butter
  • 1 cup light brown sugar
  • 2 teaspoons vanilla extract
  • 1 egg
  • 2 cups oat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup chocolate chips

Instructions

  1. In a large mixing bowl, cream together your softened butter and brown sugar on high speed until light and pale in color
  2. Add the egg and vanilla extract to the butter, and continue to beat on high until well mixed
  3. Next, you're going to add the oat flour, baking soda, salt, and cinnamon to the wet ingredients and slowly mix on low speed until just combined
  4. Finally, gently fold in the chopped chocolate with a rubber spatula then place the chocolate chip oat flour cookie dough into the fridge for 30 minutes to chill
  5. About 10 minutes before your cookie dough is done chilling preheat the oven to 350 degrees F and line 2 baking sheets with parchment paper
  6. Use a 2 tablespoon cookie scoop to scoop out the chilled dough onto the prepared baking sheets, making sure to leave 2 inches between each cookie
  7. Place the baking sheets into the oven and bake for 8-10 minutes until the edges are slightly golden brown
  8. Carefully take the trays out of the oven and let the cookies cool on them for 5-7 minutes before transferring to a wire rack to cool completely

Notes

  • Use vegan butter to make these cookies dairy free
  • Make sure your oat flour is certified gluten free
  • You want your butter to be room temperature, but not too soft
  • Don't skip chilling the dough
  • Cookies will be fragile when they come out of the oven, so let them cool on the trays first
  • Store leftover cookies in an airtight container for up to 5 days
