Oil free granola is the easiest 5 ingredient snack you can make. In just 30 minutes you can have this addictive, gluten free, vegan granola without oil.

Ingredients

  • 1 1/3 cup rolled oats
  • 1/4 cup chopped almonds
  • 1/4 cup unsweetened shredded coconut
  • 5 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon kosher salt

Instructions

  1. Preheat oven to 350 and line a baking sheet with parchment paper
  2. In a medium sized mixing bowl, stir oats, chopped almonds, and shredded coconut together.
  3. Combine maple syrup, vanilla, salt, and cinnamon is a small pot or microwave-safe bowl and melt together. If melting on the stove, do it over low heat just until syrup is hot. If melting in the microwave, do it 30 seconds at a time.
  4. Pour the hot syrup over the dry ingredients and stir until everything is coated
  5. Dump the granola out onto the parchment lined pan and use a spatula to lightly press is together
  6. Bake for 20-25 minutes, or until it turns a dark, golden brown color and smells toasted.
  7. Let cool completely on the tray before breaking it into clusters.
  8. Store in an air-tight container at room temperature for up to a month.

Notes

  • Use gluten free certified oats to make sure this granola is also gluten free
  • Chop your own almonds, or buy them from the grocery store
  • Make this with unsweetened coconut shreds to be refined sugar free
  • Once you start to smell the granola toasting in the oven keep an eye on it
  • The middle may not cooked, but don’t worry, it hardens as it cools
  • Don’t break the granola into clusters until it’s fully cooled for best results
  • Store in an airtight container for up to 1 month
