Preheat oven to 350 and line a baking sheet with parchment paper
In a medium sized mixing bowl, stir oats, chopped almonds, and shredded coconut together.
Combine maple syrup, vanilla, salt, and cinnamon is a small pot or microwave-safe bowl and melt together. If melting on the stove, do it over low heat just until syrup is hot. If melting in the microwave, do it 30 seconds at a time.
Pour the hot syrup over the dry ingredients and stir until everything is coated
Dump the granola out onto the parchment lined pan and use a spatula to lightly press is together
Bake for 20-25 minutes, or until it turns a dark, golden brown color and smells toasted.
Let cool completely on the tray before breaking it into clusters.
Store in an air-tight container at room temperature for up to a month.
