WHAT YOU NEED TO MAKE AIR FRYER SWEET POTATO CUBES

Equipment:
- Mixing bowl

Ingredients:
- Sweet potatoes: The Beauregard and Jewel varieties are the most common types of sweet potatoes you'll find in the grocery store
- Olive oil: You just need 1 tablespoon of oil, but it really helps the sweet potatoes to get crisp on the outside and super tender on the inside
- Spices: I used pantry staples spices such as salt, pepper, garlic and onion powder, and chili powder to season my air fryer sweet potato cubes
Substitutions:
- Olive oil can be substituted with avocado oil, melted coconut oil, or melted butter if you're not dairy free or vegan
- Spices can be adjusted to you taste. See below in the post for other variations
WHAT ARE THE BEST SWEET POTATOES TO USE?
The most common variety of sweet potato found in the US is the Beauregard type. They have a dark reddish colored skin and a deep orange flesh. They're also the sweetest variety and are very tender when cooked, making them great for this air fryer recipe!
The next two most common varieties are Jewel and Garnet sweet potatoes. Both are popular in the United States and will work well.
TASTE AND TEXTURE
These air fryer sweet potato cubes are SO delicious. They have sweet notes because of the sweet potatoes, but are seasoned perfectly with salt and chili powder to bring in a little bit of spice and savory notes.
As far as texture goes, they're slightly crisp on the outside and very soft and tender in the middle. These sweet potato chunks are perfectly balanced in every way!
HOW TO MAKE SWEET POTATO CUBES IN THE AIR FRYER
- Prepare sweet potatoes- Peel your sweet potatoes and cut then into ½ inch cubes
- Season- Place all the cubed sweet potatoes into a large mixing bowl and pour over olive oil, salt, pepper, garlic powder, onion powder, and chili powder. Mix well until the potatoes are evenly coated
- Air fry- Dump the seasoned potatoes into your air fryer basket and cook at 400 degrees F for 12 minutes, shaking halfway through
- Serve- Once they're fork tender, remove the sweet potato cubes from the air fryer and let cool 5 minutes before serving alongside your favorite main course

You can, but I don't recommend it. There's only 1 tablespoon in the entire recipe, and divided between 4 servings it's only 30 calories per serving.
The oil helps the exterior to crisp up and keeps the middles tender. Without the oil the cubes tend to become leathery on the outside and not as soft on the inside.
No, there's no need to soak them. Sweet potatoes are lower in starch and will crisp up nicely without soaking.
Sure, if you'd rather keep the skin on then go ahead. That's more of a personal preference, and I choose to remove the skins from my sweet potato chunks.
Both types of potatoes are healthy! While they do have different vitamins and nutrients, there's no evidence to say that sweet potatoes are healthier than regular potatoes.
Yes, just add a couple of minutes to the cooking time.
They take about 12-15 minutes to cook in the air fryer, but cooking time will vary based on your air fryer brand.
STORING LEFTOVER AIR FRYER SWEET POTATO CUBES
You can store any leftovers in an airtight container in the fridge for up to 5 days.
To reheat, cook in the air fryer at 400 degrees F for 2-3 minutes. You can also heat them in the oven at 350 F on a baking sheet for 8-10 minutes. I don't suggest reheating in the microwave because they lose their crispiness.
