Meatloaf is right up there with chili or spaghetti and meatballs when it comes to comfort food. It's hearty, filling, and absolutely delicious.
This recipe consists of all the traditional meatloaf flavors you grew up loving as a kid, but with a healthy twist. It's gluten free, dairy free, nut free, and still just as delicious!
It takes 10 minutes to prepare and cooks in 45, meaning you can have a healthy dinner on the table in under 1 hour. Pair with mashed potatoes and broccoli or gluten free garlic bread and a salad for an easy, filling meal.

Gluten Free Meatloaf Ingredients

- Ground beef: I've found that either 85/15 or 90/10 ground beef yields the best flavor. You want a little bit of fat to keep the meatloaf moist and tender.
- Egg: You'll need 1 large egg. I don't recommend leaving it out because the egg acts as a binder
- Onion: A white or yellow onion is best for cooking.
- Garlic: I like to add roasted garlic because it adds a nice depth of flavor. You could also use regular garlic if you prefer
- Oat flour: Look for a certified gluten free oat flour (Bob's Red Mill has one) or you can grind your own oats into a flour. Either will work.
- Ketchup: I prefer using a ketchup that doesn't have any added sugar. If you don't have ketchup, BBQ sauce also works.
- Coconut sugar: Instead of brown sugar, I used coconut sugar to keep the glaze refined sugar free. If using BBQ sauce, omit this ingredient.
- Spices: Keep the gluten free meatloaf simple with just salt, pepper, and Italian seasonings.
How To Make Gluten Free Meatloaf




- Preheat oven to 350 degrees F and line an 8x4 inch loaf pan with parchment paper
- In a large mixing bowl, combine all of the ingredients to make the meatloaf. Use your hands to a wooden spoon to mix well
- Once combined, use your hands to press the gluten free meatloaf mixture into your prepared loaf pan and bake for 40-45 minutes, or until the internal temperature reaches 160 degrees F
- Pull the meatloaf out of the oven and turn the heat up to 400F, whisk together the ingredients for the glaze and evenly spread of over the top of the meatloaf
- Bake at 400F for 5-6 minutes to set the glaze, then pull the pan out of the oven and let rest for 10 minutes
- Once the gluten free meatloaf has rested, carefully slice it, then serve and enjoy
What Is The Best Type Of Pan To Cook Meatloaf In?
I always use a 8x4 inch loaf pan! I also like to line it with parchment paper for easy removal.
I do not suggest making this meatloaf in a 9x5 inch loaf pan because it's too big and your meatloaf will be too flat.
Are Oats Gluten Free?
This meatloaf is made with oat flour which comes from oats, so you may be wondering if it's actually gluten free. The short answer is yes, oats are gluten free. The long answer is, there's a high risk of cross contamination between oats and the gluten protein so sometimes oats aren't considered gluten free.
I buy Bob's Red Mill certified gluten free oat flour and have never had a problem with it!

Recipe Variations
- Lightened up: Substitute the ground beef with ground turkey for a leaner option
- Make it spicy: Add a pinch of cayenne pepper to both the meatloaf mix and the glaze if you want to turn up the heat
- Add cheese: You can mix ½ cup of shredded cheddar cheese into the meat mixture if you'd like
Expert Tips
- Don't overmix the meat mixture. If you overmix it the gluten free meat loaf will turn out tough and rubbery
- Use a meat thermometer if you're nervous about it being cooked all the way through
- This recipe makes a great make ahead dinner, you can make it a day or two in advance and have a super easy weeknight meal

Storing and Reheating
STORING: Store leftovers in an airtight container in the fridge for up to 5 days. Or freeze for up to 3 months. (*see instructions below)
REHEATING: To reheat, place your gluten free meatloaf slices on a microwave safe plate and heat for 30 second intervals until warmed through.

Yes. To freeze, let it cool completely once cooked, then wrap tightly in plastic wrap and again in aluminum foil. Place the whole thing into a freezer safe bag for up to 3 months.
If you don't want to use oat flour, you can substitute it with an equal amount of gluten free Italian breadcrumbs.
