I absolutely adore this Tex-Mex Gluten Free Meatloaf! It's a healthy recipe, made with ground turkey, oats, and a few other super simple ingredients. The entire meatloaf is prepared in one bowl, baked in 1 pan, and done in 30 minutes. This easy, moist, tender meatloaf is mouth wateringly good; and has delicious Tex-Mex flavor that comes from healthy short-cut ingredients. INGREDIENTS FOR A GLUTEN FREE MEATLOAF

- Ground turkey: I like using 93/7 blend of organic ground turkey
- Oats: Make sure your oats are certified gluten free! Bob's Red Mill is my personal favorite for that
- Onion
- Egg
- Taco sauce: I use Trader Joe's Organic Spicy Taco Sauce, but Ortega is also a great brand
- Taco seasoning: Be sure to get Gluten Free Taco Seasoning! McCormick has a great one!
- Salt
HOW TO MAKE MEATLOAF GLUTEN FREE





- Preheat oven to 350 degrees F
- With a blender, grind your oats until they're rough and ragged. You don't want a fine powder like oat flour, you want them to have some texture
- In a large bowl add the ground turkey, the roughly ground oats, diced onion, a whisked egg, 2 Tablespoons of taco sauce, taco seasoning, and salt
- With you hands, gently toss everything together until well mixed, but not overmixed. If overmixed, the meatloaf will turn out tough and rubbery
- Once mixed, dump the meatloaf mix into your baking dish or onto a baking sheet and use your hands to form it into a loaf
- Spread the remaining 2 Tablespoons of taco sauce over the top of the gluten free meatloaf and place it into the preheated oven
- Bake for 30 minutes then pull it out of the oven and let the meatloaf rest for 10 minutes before cutting
- Cut into slices, serve along with your favorite side dishes, and enjoy!

TIPS FOR AN AMAZING MEATLOAF
- Read the entire recipe before beginning
- The oats need to be roughly ground, NOT a fine powder like oat flour. You want them to have texture
- Don't overmix the meatloaf mix. If you overmix it the meatloaf will turn out tough and rubbery
- Use a meat thermometer if you're nervous about it being cooked all the way through. The internal temperature should reach 160 degrees F when you take it out of the oven and by letting the meatloaf rest for 10 minutes it will take the temperature up to a safe 165 degrees F
- This recipe makes a great make ahead dinner, you can make it a day or two in advance and have a super easy weeknight meal

- What type of pan in best to cook the meatloaf in? I usually cook mine in a ceramic baking dish, but you could also make it in a 8x4 loaf pan
- Can I make meatloaf on a baking sheet? Yes! Sometimes I'll bake my meatloaf on a baking sheet lined with parchment paper and cook it that way. It usually depends on the day and how I'm feeling lol
- Am I able to make gluten free meatloaf ahead of time? Absolutely you can! Meatloaf is one of those recipes that usually tastes better the next day, so feel free to make it 1-2 days in advance.
- Is meatloaf able to be frozen? Yes, you can definitely freeze meatloaf. Wrap it in plastic wrap after it's cooked and completely cool, place it into a freezer-safe bag, and put it into the freezer for up to 3 months.
- How do I know when the meatloaf is done? The internal temperature should be 165 degrees F, you can use a meat thermometer to test if you want, but I've found that baking for 30 minutes and letting it rest for 10 minutes after cooking always leads to a perfectly cooked meatloaf.
