When I'm not in a rush, tender, fluffy pancakes are one of my all time favorite breakfasts to make! While I love the classic, all American buttermilk pancakes, I much prefer to make these oat milk pancakes as a healthier alternative.
This recipe is wonderful to enjoy plain with syrup, but it also makes a great base to mix in fun additions such as blueberries, bananas, chocolate chips, or sprinkles. These are also great to meal prep and keep in the freezer for fast, on-the-go breakfasts.
These pancakes are dairy free and soy free, with the option of making them gluten free, nut free, and vegan. Serve traditionally with pure maple syrup, or top with dairy free yogurt, whipped cream, berries, or jam.

WHAT YOU'LL NEED TO MAKE OAT MILK PANCAKES

Kitchen Tools:
- Large pan or electric griddle
- Mixing bowl
- Wooden spoon
- Measuring cups and spoons
- Flat spatula
Ingredients:
- Oat milk: Any kind of oat milk will work. I prefer Oatly's unsweetened oat milk, but vanilla will work as well
- Sugar: For this recipe I used granulated sugar, but brown sugar or coconut sugar also work
- Eggs: Always use large eggs in recipes unless the recipe card states otherwise
- Vanilla extract: For the best flavor, use pure vanilla extract
- Flour: I made mine with all purpose flour, but you could also use a 1:1 gluten free flour blend
- Baking powder: 1 tablespoon may sound like a lot, but it helps achieve that tender, fluffy pancake texture
- Coconut oil: To keep this recipe dairy free, I used melted coconut oil. Melted butter, melted vegan butter, or avocado oil are all acceptable substitutions
HOW TO MAKE FLUFFY OAT MILK PANCAKES
Note: Full ingredient measurements and directions can be found in the recipe card listed below
Step One: Heat a large non-stick skillet on the stove over medium/low heat and spray lightly with non-stick cooking spray
Step Two: In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt and set aside. In a large measuring cup whisk together the oat milk, eggs, melted coconut oil, and vanilla extract.
Step Three: Pour the wet ingredients into the dry ingredients and mix with a wooden spoon until JUST combined. The batter may be lumpy, but that is ok- you don't want to overmix the pancake batter
Step Four: Since your pan is hot, go ahead and start cooking. Drop ¼ cup of the dairy free pancake batter into your hot skillet. Once bubbles start to form around the edges of the pancake (about 2 minutes), use a flat rubber spatula to flip it and cook for 1-2 more minutes
Step Five: Repeat step 4 until all of the batter is used up, then serve your oat milk pancakes and enjoy!




RECIPE VARIATIONS
While plain pancakes are delicious drizzled with pure maple syrup, here's a few varieties to try if you're feeling adventurous!
- Blueberry- fold ½ cup of wild blueberries into the batter
- Triple berry- chop up strawberries and blackberries and fold them into the batter with whole blueberries
- Strawberry banana- Once your pancakes are in the skillet, top with slices of strawberries and banana before flipping
- Chocolate chip- Fold ½ cup mini chocolate chips into the batter
- Peanut butter- Mix in 2 tablespoons of peanut butter powder into the dry ingredients and top cooked pancakes with melted peanut butter
- Pumpkin spice- Substitute the coconut oil with pumpkin puree and add in ¾ teaspoon of pumpkin pie spice
- Lemon curd: Instead of maple syrup, top these pancakes with homemade lemon curd!
FAQs
Yes, they are fairly healthy! For one, you're making them yourself so there's no weird additives or preservatives, second they're dairy free, and lastly the coconut oil is a good source of healthy fats.
To make them vegan, substitute the egg with ¼ cup mashed banana or applesauce.
For a gluten free option, substitute the flour with a 1:1 gluten free flour blend and use a gluten free oat milk such as Oatly.
Oat milk has a slightly sweet, almost nutty flavor. That's why it works so well in pancakes because the flavor naturally gets enhanced just by adding vanilla, sugar, and then topping with maple syrup.
If your pancakes aren't fluffy, then your batter probably got overmixed. It can be tempting to try and smooth out a lumpy batter, but the lumps actually help keep them tall and fluffy when cooking.
I'm usually a straight stick, pure maple syrup girl, but there's tons of other yummy toppings! You could do berries, warm jam, melted nut butters, dairy free yogurt, powdered sugar, dairy free whipped cream, applesauce, or honey.

HOW TO STORE AND FREEZE LEFTOVER PANCAKES
Storing: You can keep any leftover oat milk pancakes in an airtight container in the fridge for up to 5 days. To reheat, simply pop them into the toaster and air fryer for a few minutes until warmed through
Freezing: For quick and easy breakfasts, try freezing your pancakes! Undercook your pancakes ever so slightly and let them cool completely. Once cooled, place into a freezer safe bag and pop into the freezer. When your ready, pop your frozen pancakes onto a baking sheet and bake at 350 F for 8-10 minutes until warmed through.

Ingredients
- 1 ½ cup all purpose flour
