No-Bake Cookie Dough Bites

This fun no bake dessert can be made in just 30 minutes, only needs 5 simple ingredients, and is the easiest edible cookie dough recipe out there. It's a tasty treat that is eggless, gluten free, and needs a few simple swaps to make it vegan.

Ingredients

  • 5 Tablespoons Softened Butter
  • 1/3 cup Brown Sugar (sugar-free if needed)
  • 3/4 Teaspoon Vanilla Extract
  • 3/4 cup Oat Flour
  • 1/4 Teaspoon Salt
  • 1 1/2 Tablespoons + 2/3 Cup Mini Chocolate Chips

Instructions

  1. In a large bowl, add softened butter, brown sugar, vanilla, oat flour and salt. Use a hand mixer on low speed and gradually turn the speed up to medium. Beat until everything is well combined
  2. Pour 1 1/2 Tablespoons mini chocolate chips into the dough, and use a rubber spatula to gently fold them in
  3. Use your hands to roll them into bite-size balls, place them on a cookie sheet lined with parchment paper, and place into the freezer for 20 minutes
  4. After about 18 minutes, begin to melt your chocolate. In a microwave safe bowl, or small pot melt 2/3 cup chocolate chips with 1-2 teaspoons of coconut oil to thin. (Add more coconut oil if needed, you want the chocolate to be smooth and completely melted)
  5. Take the cookie dough balls out of the freezer and use a spoon to coat them in the melted chocolate, and place back onto the cookie sheet
  6. Once they're all coated, place them back into the freezer for 10-15 minutes

Notes

  • Calories calculated are an estimate
  • I use salted butter, but you can substitute with unsalted butter or even vegan butter
  • Substitute the Purecane brown sweetener with a 1:1 ratio of regular brown sugar
  • You can substitute the oat flour with 2/3 cup gluten free all purpose flour
  • Use your judgement to get the right consistency. If it seems too sticky, add more oat flour, or add a little more butter if it's too dry
  • I make this with a hand mixer, no need to drag out a big stand mixer
  • Store leftovers in an airtight container or ziploc bag in the fridge
