No-Bake Cookie Dough Bites (gluten free & easily vegan)

A new favorite, these chocolate covered cookie dough bites are so fun and easy! You only need 5 main ingredients and a couple minutes to make this easy no bake treat that is gluten free and can easily be made vegan. There's no raw eggs, no raw flour, just pure edible cookie dough coated in dark chocolate. Does it get any better?!

I. Love. Cookie dough. Chocolate chip cookie dough is my favorite ice cream, edible cookie dough is my favorite snack, and any type of cookies are easily my favorite dessert. Needless to say, I'm a cookie/ cookie dough fan. So, while plain edible cookie dough is delicious, I found a way to make it even better- by covering it in chocolate. These fun little cookie dough bites are such a great dessert to easily satisfy your sweet tooth.

This fun no bake dessert can be made in just 30 minutes, only needs 5 simple ingredients, and is the easiest edible cookie dough recipe out there. It's a tasty treat that is eggless, gluten free, and needs a few simple swaps to make it vegan. These no bake cookie dough bites are sure to be one of your new favorite desserts!

WHAT YOU NEED FOR COOKIE DOUGH BITES

  • Butter: I use room temperature, salted butter in this recipe. But you could easily use vegan butter and make these bites vegan
  • Brown sugar: To make these a little healthier, I used Purecane's brown sugar sweetener, but regular brown sugar will also work
  • Oat flour: I use Bob's Red Mill CERTIFIED gluten free oat flour, but if you do not feel comfortable because of gluten sensitivities, replace it with almond flour or gluten free 1:1 flour. (you will need to adjust the amount a bit)
  • Vanilla Extract: Don't skip this, it really helps the flavor of the cookie dough
  • Mini chocolate chips: I like the Enjoy Life Mini Chocolate Chips because they're gluten free, dairy free, and vegan friendly. Regular chocolate chips will work as well

HOW TO MAKE EDIBLE COOKIE DOUGH BITES

Mix ingredients together

Roll into bite-size balls and freeze

Coat in chocolate and freeze again
  1. In a large bowl, add all ingredients except chocolate chips. Beat on low speed and gradually turn the speed up to medium. Mix until everything is well combined
  2. Next, pour the mini chocolate chips into the dough, and use a rubber spatula to gently fold them in
  3. Use your hands to roll them into bite-size balls and place them on a cookie sheet lined with parchment paper and place them into the freezer for 20 minutes
  4. After about 18 minutes, begin to melt your chocolate. In a microwave safe bowl, or small pot melt ⅔ cup chocolate chips with 1-2 teaspoons of coconut oil to thin. Add more coconut oil if needed, you want the chocolate to be smooth and completely melted
  5. Take the cookie dough balls out of the freezer and use a spoon to coat them in the melted chocolate, and place back onto the cookie sheet
  6. Once they're all coated, place them back into the freezer for 10-15 minutes

RECIPE VARIATIONS

While these edible chocolate chip cookie dough bites are phenomenal as they are, sometimes it's fun to mix things up and try something new! Here's a few ideas to try if you'd like

  • Use white chocolate chips instead
  • Substitute 2 tablespoons of butter with 2 tablespoons of peanut butter or almond butter for a nutty twist!
  • Add in 2 tablespoons of cocoa powder for a chocolatey twist! (use 2 tablespoons LESS of oat flour to begin with and add more as needed)
  • Make them funfetti by adding in 2 tablespoons of rainbow sprinkles

EXPERT TIPS

  • Use softened, not melted butter
  • I use salted butter, but you can substitute with unsalted butter or even vegan butter
  • Substitute the Purecane brown sweetener with a 1:1 ratio of regular brown sugar
  • You can substitute the oat flour with ⅔ cup gluten free all purpose flour
  • Use your judgement to get the right consistency. If it seems too sticky, add more oat flour, or add a little more butter if it's too dry
  • I make this with a hand mixer, no need to drag out a big stand mixer

FREQUENTLY ASKED QUESTIONS

  1. How do I store leftovers? You can keep any extra in an airtight container or ziploc bag in the fridge for up to a week.
  2. Can you eat raw cookie dough? Not usually because of the raw eggs and flour, but this recipe doesn't have either and is perfectly safe to eat.
  3. Do you need to heat treat gluten free flour? Oat flour doesn't need to be, but a gluten free all purpose flour does need to me heat treated. Cook it on a baking sheet at 350 f for 5-10 minutes.
  4. Can I bake this dough? No. this dough is not designed to be baked. If you're looking for baked chocolate chip cookies, then try this recipe.
