These lemonade popsicles are an easy, sugar free treat that are perfect for summer. They're bright, sweet, and the lemon flavor is so refreshing!

Ingredients

  • 1/3 cup lemon juice (fresh squeezed is best)
  • 1/2 cup monk fruit
  • 1 1/2 cups cold water

Instructions

  1. In a medium size pot, add your lemon juice and monk fruit
  2. Place the pot on the stove over medium heat and cook until the monk fruit is dissolved, making sure to stir often
  3. Once the monk fruit is dissolved, turn the heat off and pour the lemon syrup into a large, glass measuring cup
  4. Add cold water to the measuring cup, stir well, then carefully pour the popsicle mixture into your popsicle molds
  5. Pop the lids onto your popsicles and place in the freezer to allow them to freeze completely. About 6-8 hours.

Notes

  • Use fresh squeezed lemon juice for the best flavor
  • Monk fruit can be substituted with white sugar
  • Use a funnel or measuring cup with a spout to easily fill your popsicle molds
  • Allow 6-8 hours for these to freeze completely before enjoying
  • These are great to make at night, so you have a refreshing treat when you wake up
  • Run popsicle mold briefly under hot water if you're having trouble removing them
