This healthy pumpkin bread is the best out there! It's light, fluffy, and full of warm pumpkin flavor. This recipe is gluten free, refined sugar free, as well as dairy free making it a great healthy snack or easy breakfast.

Ingredients

  • 1 cup Canned pumpkin (not pumpkin pie filling)
  • 3/4 cup Unsweetened applesauce
  • 3/4 cup Monk fruit
  • 2 Eggs
  • 1/2 Tablespoon Apple cider vinegar
  • 2 1/4 cup Oat flour
  • 1 Tablespoon Baking powder
  • 1/2 Teaspoon Baking soda
  • 2 1/2 Tablespoon Pumpkin pie spice
  • 3/4 Teaspoon Salt

Instructions

  1. Preheat your oven to 350 degrees F (180 degrees C) and line a 9 inch by 5 inch loaf pan with parchment paper
  2. In a large bowl, stir together the canned pumpkin, applesauce, monk fruit, eggs, and apple cider vinegar
  3. Add the oat flour, baking powder, baking soda, pumpkin pie spice and salt into the wet ingredients
  4. Use a rubber spatula to gently fold in the dry ingredients and mix until fully incorporated
  5. Pour the gluten free pumpkin bread batter into your prepared loaf pan and top with pumpkin seeds
  6. Bake in preheated oven for 50-55 minutes, or until a toothpick inserted into the center comes out clean
  7. Let the healthy pumpkin loaf cool in the pan, then pull it out, slice, and enjoy!

Notes

  • Do not use pumpkin pie filling! The recipe WILL NOT work
  • Don't use a dry canned pumpkin puree, you want it to be smooth and wet
  • Line your loaf pan with parchment paper for easy removal
  • Top with pumpkin seeds for an additional crunch!
  • Use Bob's Red Mill Certified Gluten Free Oat Flour
  • Store leftovers wrapped in aluminum foil for up to 5 days
