Key Ingredients Needed
*full ingredients list and measurements can be found in recipe card below*

- Gluten free oats: In order to ensure your granola is gluten free, you'll want to use a brand that certifies their oats are gluten free. I like to use Bob's Red Mill
- Coconut oil: The oil helps the granola to bake up super crunchy and forms nice clusters
- Maple syrup: Maple syrup is my sweetener choice because it's less processed than white sugar and it also gives a nice flavor
- Nuts: The nuts are important to add texture and crunch to your granola. Usually I use chopped almonds or cashews
- Shredded coconut: I'm not usually a fan of coconut, but I LOVE toasted coconut in granola for extra crunch and a light sweetness
- Spices: For this recipe, I flavor it with vanilla extract, salt, cinnamon, and nutmeg
Gluten Free Granola Mix-In Ideas
The key ingredients listed above are for the most basic base. You can leave it as is, or add a few extra ingredients to customize the recipe. It's up to you!
- Dried fruit: You can add in dried cranberries, raisins, or even chopped candied ginger. Just be sure to add these in at the end, otherwise they'll burn
- Chocolate chips: Dairy free chocolate chips, white chocolate chips, or even mini are all yummy in this recipe! Make sure the granola is completely cooled before adding them in or else they will melt.
- Seeds: Pumpkin seeds and sunflower seeds can be added in when you stir in the nuts. If you want to add hemp or chia seeds, stir them in once the granola is cooled.
- Nuts: I know I mentioned I usually add chopped almonds or cashews, but you could also add pecans, walnuts, or even pistachios if you prefer.
How To Make Gluten Free Granola
- Preheat your oven to 350 degrees F and line a baking sheet with parchment paper
- Place all ingredients except dried cranberries into a food processer. Pulse a few times to chop the nuts, but don't pulse too much because you still want chunks
- Transfer the mixture onto your parchment lined baking sheet and place into the oven. Bake for 10 minutes, then pull the tray out, give it a stir, then lightly press the mixture together before placing back into the oven
- Bake for another 10-12 minutes, or until the top is lightly golden brown and you begin to smell the granola
- Carefully pull the tray out of the oven and allow it to cool completely before mixing in the dried cranberries
- Store in an airtight container in a cool, dry place for up to 2 weeks

Are Oats Gluten Free?
The actual oat grain itself is technically gluten free. There is some issues over whether or not oats are safe, and that comes from the high risk of cross contamination because most oats are processed in factories that process gluten containing products as well.
If you're making this granola for someone celiac be sure to use gluten free certified oats like these ones.

Expert Tips
- Make this with gluten free certified oats for safe measure
- Substitute the nuts with seeds if you have a nut allergy and leave out the coconut
- If you substitute the maple syrup with honey this granola won't be vegan
- Bake the granola on parchment paper so the syrup sticks to the oats rather than the baking sheet
- Press the mixture together lightly with a spatula to help it form big clusters
- Take it out of the oven once the top is lightly golden brown, it will continue to harden as it cools
Granola Substitutions and Variations
This recipe is pretty forgiving and can handle a lot of substitutes. If you are substituting any ingredients, please know that the granola may no longer fit some of the diets I have listed.
- Maple syrup: You can use date syrup or honey in its place
- Coconut oil: Olive oil or avocado oil are two great substitutes if you have a nut allergy
- Nuts: Speaking of nuts, you can easily leave them out or swap with an equal amount of seeds in their place
VARIATIONS:
- Pumpkin spice: Mix in ¼ cup of pumpkin seeds and season with 2 teaspoons of pumpkin pie spice and ½ teaspoon of ground cinnamon
- Orange cranberry: To the granola mixture, add 2 teaspoons of orange zest and 1 teaspoon of cinnamon. Stir dried cranberries in once granola is cooled
- Honey vanilla: Swap the maple syrup out for honey and add 1 extra teaspoon of vanilla. Stir some chopped dried peaches once cooked and enjoy! (Not vegan)
Storing Gluten Free Granola
STORING: Gluten free granola will stay good for up to 2 weeks if stored in an airtight container in a cool, dry place. I usually keep mine in a Mason jar in the pantry.
FREEZING: Put the granola into a freezer safe bag and get as much of the air out as possible. Place the bag into your freezer and freeze for up to 3 months. Thaw overnight before using.
