If you know me, you know how much I love cookie dough! Edible cookie dough, gluten free cookie dough bites, and especially cookie dough ice cream. One of my favorite things is going to the boardwalk, getting an ice cream cone, and enjoying the sunshine. It just feels like the epitome of summer, and fills me with so much joy!
While I do LOVE ice cream, I know that eating it all the time isn't going to make me feel great, which is why I am obsessed with this cookie dough banana nice cream! It's super easy to make, only needs 2 main ingredients, and tastes so similar to the classic treat, you'll practically feel the sunshine on your face as you eat it. INGREDIENTS FOR COOKIE DOUGH NICE CREAM

- Cookie dough bites: I use my gluten free bite recipe. They're super simple, take 5 minutes to make, and can easily be made vegan.
- Frozen bananas: Be sure to cut them into slices before freezing. Banana slices are much easier blend up than whole bananas.
- Almond milk: You want to use as little liquid as possible, if you add too much the banana ice cream will get icy when it's frozen
- Vanilla extract: This really helps aid in achieving a true cookie dough ice cream flavor
- Sweetener: This is totally optional! I found the nice cream to be sweet enough, but you could add a splash of maple syrup or a little bit of monk fruit if you want it sweeter.
HOW TO MAKE HEALTHY COOKIE DOUGH NICE CREAM




- Make your cookie dough balls and set them aside
- To the base of your food processor or high-speed blender add the frozen banana slices and vanilla extract. Blend on high speed until smooth and creamy. If you need to add almond milk, pour a teaspoon at a time into the blender until you get the right consistency.
- Next, remove the lid and add the cookie dough bites into the blender. Put the lid back on, and pulse the blender until the cookie dough is roughly incorporated
- Add a few extra mini chocolate chips at the end and enjoy immediately, or use a spatula to transfer the nice cream mixture into airtight container and keep in the freezer
HOW TO MAKE GLUTEN FREE COOKIE DOUGH BITES
I use the base of my chocolate covered cookie dough bites, and cut the ingredients in half so it's the perfect amount for this creamy treat.
Cookie dough ingredients:
- Butter: can sub vegan butter for dairy free
- Brown sugar: I like Purecane so there's no added sugar
- Vanilla & salt
- Oat flour: or almond flour, but I prefer the texture of oat flour
- Mini chocolate chips: Feel free to use Enjoy Life for a dairy free and gluten free
Directions:
- In a small bowl, beat all ingredients except chocolate chips on medium speed with a hand mixer
- Use a rubber spatula to gently fold in mini chocolate chips
- With your hands, roll the dough into ½ inch balls and set aside on a piece of parchment paper until needed

EXPERT TIPS FOR THE BEST BANANA ICE CREAM
- Freeze ripe bananas for the creamiest nice cream
- Use a very minimal amount of almond milk if adding it to the nice cream base. It will become too icy if you add too much
- Don't blend the bites too much, because you want to be able to see big chunks of edible cookie dough in the banana nice cream
- Top with chocolate syrup, extra cookie dough, or even crushed up cookies!
- Enjoy immediately for best results, or store in an airtight container or loaf pan covered with plastic wrap in the freezer for up to 2 weeks
- Substitute the butter in the cookie dough for vegan butter so you have both dairy free and vegan cookie dough
- You can use cacao nibs in place of the chocolate chips for a healthier option
