This recipe takes just 10 minutes to prepare and is perfect to serve at any Superbowl or birthday party. Using cooked potatoes, all you need to do is cut them in half, fill with bacon and cheddar cheese, then air fry the potato skins until the cheese is melted.

What You Need For Air Fryer Potato Skins

- Russet potatoes: You want to use a sturdy potato like a russet because the skin is thicker and will hold up better in the air fryer. Gold or red potatoes have a thin skin that is too delicate for this recipe
- Shredded cheese: I like cheddar cheese, but pepper jack or Monterey jack would also be good
- Bacon: You want you bacon to be cooked and crispy. Additionally, you can also use turkey bacon for less fat!
How To Make Air Fryer Potato Skins
- Begin by wrapping clean potatoes in aluminum foil
- Place the wrapped potatoes into the air fryer, and air fry at 390 degrees F for 45 minutes
- Once the potatoes are cooked through, unwrap them from the foil and *carefully* slice them in half They will be hot!! So be careful as you scoop out the centers. If you want to let them cool for 10-15 minutes you're more than welcome to.
- When scooping out the centers, you want to leave a ¼ inch barrier between the skin and the part you're taking out
- Fill the scooped out center with shredded cheese and chopped bacon
- Place the now loaded potato skins back into the air fryer and cook at 380 degrees F for 5-6 minutes
- Use tongs to carefully remove them from the air fryer and serve them as is, or with sour cream and chopped green onions
