Creamy Gluten Free Lasagna Soup: One Pot

This creamy gluten free lasagna soup makes for a delicious, easy, cozy weeknight meal. If you want all the comfort of lasagna with half of the work, then you've got to make this soup! This cozy recipe is creamy, easy, gluten free and made in just one pot. This family friendly meal makes for a simple weeknight dinner done in about 30 minutes.

I'll admit it, I don't like lasagna...However! I will gladly take a bowl of this creamy gluten free lasagna soup! Oh my is it good. Italian chicken sausage is sautéed with onion and garlic, then you add in all the elements to make it creamy, finish off with noodles and cheese, and man oh man you have got yourself a super easy, super cozy meal. The soup is ready in just about 30 minutes and is made with pantry staples so you don't have an excuse not to make it. If you want comfort in a bowl, then this easy, creamy lasagna soup is the way to go.

INGREDIENTS FOR CREAMY GLUTEN FREE LASAGNA SOUP

  • Italian Chicken Sausage: I used Primo Sweet Italian Chicken Sausage. You want a ground sausage you can remove from its casing. If you don't want to use Italian chicken sausage you can use regular Italian sausage or ground beef!
  • Diced onion
  • Garlic
  • Italian Seasoning: This spice blend is one of my favorites to use! It adds so much flavor from just one ingredient
  • Salt and Pepper
  • Canned tomato sauce
  • Chicken broth
  • Coconut milk: I used lite coconut milk in my soup, but any canned coconut milk will work!
  • Mozzarella cheese: I recommend buying pre-shredded mozzarella cheese for this soup because it melts easier
  • Gluten free lasagna noodles: Read the section down below for my best recommendations!

HOW TO MAKE GLUTEN FREE LASAGNA SOUP

Prepare your ingredients

Sautee Italian chicken sausage, onions, and garlic in a large pot

Add in all ingredients but noodles and cheese and bring to a boil

Break up noodles and stir in cheese. Boil for 10-12 minutes
  1. To a large pot over medium heat, add Italian chicken sausage that's been removed from it's casing and the diced onion. Use a wooden spoon to break up the chicken sausage into small pieces as it cooks
  2. Once the chicken sausage is cooked and the onion is soft (about 6-7 minutes) add in the minced garlic and sauté that for 1 minute
  3. To the pot, add in the Italian seasoning, salt, pepper, canned tomato sauce, chicken broth, and coconut milk. Stir it all together, place a lid on top, and bring to a boil
  4. When the soup is boiling, break up the gluten free lasagna noodles and place them into the boiling soup. Also add in the cheese and stir to combine
  5. Place the lid back into the pot and boil the soup for 10-12 minutes, or until the noodles are soft and cooked through
  6. Use a ladle to serve up the soup, top with more cheese, and enjoy!

WHERE CAN I BUY GLUTEN FREE LASAGNA NOODLES?

Most grocery stores now carry them! My local grocery store carries a store brand of gluten free lasagna noodles that I get, but brands such as Jovial, Tinkyada, and Chickapea can be found in specialty health food stores or ordered online. I say, just drive over to your local grocery store and take a look, you may be able to find something new to try!

Most gluten free lasagna recipes call for using Barilla Oven Ready Gluten Free lasagna sheets, but since this is a gluten free lasagna SOUP recipe, I would not recommend them.

EXPERT TIPS

  • Read the entire recipe before beginning
  • Don't drain any grease from when you cook the sausage, it adds flavor!
  • I used Italian chicken sausage in my recipe for a leaner version, but you can use regular sausage or ground beef as well
  • Swap out the mozzarella cheese for a vegan/ dairy free alternative to make this soup dairy free as well!
  • If you can't find gluten free lasagna noodles, any gluten free noodle will work well in here!
  • Make the soup a day in advance to allow the flavors to meld together even more!
  • Store leftovers in an air tight container in the fridge for 3-5 days

  1. Can I make this in advance? Yes! Just like lasagna, this soup gets better as it sits. You can make it a day in advance and enjoy an easy meal the following day.

  3. Can I freeze lasagna soup? I suppose you can try it, but personally I'm not a big fan of frozen soups. If you do choose to freeze it, pour the soup into a freezer safe container and freeze it for up to 3 months. Defrost the frozen soup in the fridge overnight.
  4. Can I make this easy lasagna soup with regular noodles? Absolutely! If you are not gluten free or simply just don't have gluten free lasagna noodles, you can use any noodle you'd like.
