Zucchini and Squash in the Air Fryer

Zucchini and squash in the air fryer is the perfect way to use up all that abundant summer produce! Serve with chicken, burgers, or even pizza for a delicious 10 minute side the whole family will love.


  • 2 cups sliced zucchini
  • 2 cups sliced yellow squash
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 3/4 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper


  1. Preheat air fryer to 380 degrees F
  2. On a cutting board, use a sharp knife to slice zucchini in half lengthwise. Place the flat sides down on the cutting board and carefully cut it into half circles.
  3. Place the zucchini slices into a large bowl and repeat step 2 with the yellow squash
  4. To the bowl of sliced veggies add the olive oil, Italian seasoning, salt, garlic, and black pepper. Use a wooden spoon to mix to coat everything evenly
  5. Place the seasoned squash into your preheated air fryer basket and cook at 380 degrees F for 7 minutes, shaking halfway through
  6. Once cooked, use a spatula to place them onto a serving platter and enjoy!


  • Use zucchini and squash that are similar in size
  • Press out any excess water with paper towels
  • Don't add too much oil
  • Use your favorite seasoning
  • Finish with a squeeze of lemon juice and fresh herbs
  • Season to taste
  • Store leftovers in an airtight container in the fridge for up to 5 days
