Best Zucchini and Squash in the Air Fryer

Zucchini and squash in the air fryer is an easy recipe and a great way to use up all that abundant summer squash. It's ready in under 10 minutes, only needs a handful of ingredients, and makes a great side dish to so many of your favorite meals!

With a few simple ingredients and less than 10 minutes you can make the best zucchini and squash in the air fryer! It's an easy recipe that only needs one bowl and 3 main ingredients in order to make a simple side dish that is perfect during these summer months.

You can serve this low calorie dish with chicken, steak, shrimp, or even pizza for a healthy side the whole family is sure to love. It's a great way to use up all that summer squash AND get your family to eat their veggies!

WHAT YOU NEED FOR ZUCCHINI AND SQUASH IN THE AIR FRYER

Equipment:

  • Cutting board
  • Sharp knife
  • Mixing bowl
  • Air fryer

Ingredients:

  • Zucchini: I like to use a medium size zucchini
  • Yellow squash: Look for one without blemishes or soft spots, and also has a bright yellow skin
  • Olive oil: Use a good quality like Pompeian
  • Spices: Salt, ground black pepper, garlic powder, and Italian seasoning

HOW TO COOK ZUCCHINI AND SQUASH IN THE AIR FRYER

  1. Preheat air fryer to 380 degrees F
  2. On a cutting board, slice zucchini in half lengthwise then place the flat sides down on the cutting board and carefully cut it into half circles. Place the zucchini slices into a large bowl and repeat the process with the yellow squash
  3. To the bowl of veggies add the olive oil and spices and mix to coat everything evenly
  4. Place the seasoned squash into your preheated air fryer basket and cook at 380 degrees F for 7 minutes, shaking halfway through
  5. Once cooked, use a spatula to place them onto a serving platter and enjoy!

INGREDIENT SUBSTITUTIONS AND VARIATIONS

Substitutions:

Zucchini and yellow squash: Use all zucchini or all fresh yellow squash.

Olive oil: You can substitute it with avocado oil

Spices: Swap them out for taco seasoning, fajita seasoning, or Greek seasoning. Use your favorite seasoning, it's pretty versatile!

Variations:

  • Add parmesan cheese to the spices
  • Slice into thin circles and make sort of air fryer zucchini chips
  • Use as a healthy base for meatballs and marinara sauce

How do you cook zucchini without making it soggy?

  • Once sliced, place the zucchini and squash slices on a paper towel and gently press out some of the water
  • Use only a tiny bit of oil. Squash soaks it up like a sponge, and too much would leave you with greasy, soggy squash
  • Cook in a single layer to get golden brown, not soggy squash

Is squash good in the air fryer?

You can totally roast this recipe in a traditional oven if you don't have an air fryer! To do that you'd mix the cut squash with 1-2 tablespoons of olive oil, keep the seasoning the same, then spread the seasoned veggies out in a single layer on a baking sheet and cook in a preheated oven at 350 degrees F for 12-15 minutes.
