Equipment:
- Cutting board
- Sharp knife
- Mixing bowl
- Air fryer
Ingredients:
- Zucchini: I like to use a medium size zucchini
- Yellow squash: Look for one without blemishes or soft spots, and also has a bright yellow skin
- Olive oil: Use a good quality like Pompeian
- Spices: Salt, ground black pepper, garlic powder, and Italian seasoning
HOW TO COOK ZUCCHINI AND SQUASH IN THE AIR FRYER
- Preheat air fryer to 380 degrees F
- On a cutting board, slice zucchini in half lengthwise then place the flat sides down on the cutting board and carefully cut it into half circles. Place the zucchini slices into a large bowl and repeat the process with the yellow squash
- To the bowl of veggies add the olive oil and spices and mix to coat everything evenly
- Place the seasoned squash into your preheated air fryer basket and cook at 380 degrees F for 7 minutes, shaking halfway through
- Once cooked, use a spatula to place them onto a serving platter and enjoy!



INGREDIENT SUBSTITUTIONS AND VARIATIONS
Substitutions:
Zucchini and yellow squash: Use all zucchini or all fresh yellow squash.
Olive oil: You can substitute it with avocado oil
Spices: Swap them out for taco seasoning, fajita seasoning, or Greek seasoning. Use your favorite seasoning, it's pretty versatile!
Variations:
- Add parmesan cheese to the spices
- Slice into thin circles and make sort of air fryer zucchini chips
