- Tortillas: I've found that flour tortillas work better than corn because they are more pliable. Corn are a good gluten free option, but they break easier.
- Cheese: Any kind of cheese will work, but I prefer either cheddar or Pepper Jack. It's best to buy block cheese and shred it yourself because pre-shredded contains cellulose and doesn't melt well
- Chicken: Chicken is optional, but I like adding extra protein to my air fryer quesadillas. You can use leftover or rotisserie chicken to save time.
- Oil: The oil helps the tortillas to get brown and crispy. For this recipe I prefer avocado oil because of it's neutral taste but olive oil also works.
How To Make Quesadillas In The Air Fryer
- Lay your tortilla on a flat surface and distribute ¼ cup of diced chicken breast and ⅓ cup of shredded cheese over half of it, then fold the tortilla in half.
- Repeat with the remaining tortillas
- Place 2 quesadillas into the air fryer basket and brush a light coating of oil over the top. Cook at 350 degrees F for 8 minutes, flipping halfway through
- Once done, cook the other 2 quesadilla, then slice and serve immediately

I personally like cheddar or pepper jack cheese in my quesadillas, but you can use your favorite. My only suggestion is to buy block cheese and shred it yourself because pre-shredded contains cellulose which prevents it from melting well.

STORING: You can store any leftovers in an airtight container in the fridge for up to 3 days. These can also get frozen in a freezer safe bag for up to 3 months, just be sure to lay flat.
REHEATING: Place your leftover quesadilla into the air fryer basket and heat at 350 degrees F for 3-4 minutes. You can also reheat in a 350F preheated oven on a baking sheet for 10 minutes.
