Air Fryer Hasselback Potatoes

These air fryer hasselback potatoes are simple incredible. Crispy, buttery, and impressive to look at- they're sure to become a new family favorite side.

Hasselback potatoes are thinly sliced and basted, then air fried so that the slices separate and develop a "fan-like" look. The basted butter seeps into the cracks and crevices to create a truly mouth watering dish.

Though this recipe does take a small amount of extra effort, the end result is totally worth it. Pair with a whole roast chicken or air fryer pork loin for a healthy, filling meal.

Ingredients for Air Fryer Hasselback Potatoes

  • Potatoes: For these hasselback potatoes in the air fryer I prefer to use regular Russet potatoes. However, Yukon gold are another good option
  • Butter: Butter helps these potatoes so be super flavorful and develop a nice, crisp exterior. If you'd rather not use butter, vegan butter or olive oil also work
  • Spices: I like my potatoes to be super flavorful so I use a mixture of fresh garlic, salt, pepper, paprika, onion powder, and ground mustard powder. If you prefer to keep them simple, just use the garlic, salt, and pepper

How To Make Hasselback Potatoes In The Air Fryer

  1. Wash and dry your potatoes, then slice them into ⅛ inch slices making sure to leave ½ inch base at the bottom.
  2. Mix the melted butter with the spices and set aside
  3. Place the potatoes into the air fryer basket and baste them with half of the butter mixture
  4. Cook at 400 F for 30 minutes, basting halfway through with the remaining butter

How To Cut The Perfect Hasselback

While this recipe may look impressive and tricky, it really could not be easier. Here's a few tricks so that you can cut the perfect potato.

  1. Slice a small portion off of the bottom to create a flat surface
  2. Lay the potato flat and use a sharp knife to cut every ⅛ of an inch
  3. Try and leave about ½ inch of whole potato on the bottom so you don't cut all the way though. You can put 2 wooden spoons on either side of the potato to create a natural stop for your knife

Expert Tips and Tricks

  • Choose potatoes that are all similar sizes so they cook evenly
  • Don't cut all the way through the potato, you want about ½ inch left on the bottom
  • You can peel the potatoes if you prefer
  • Use olive oil or vegan butter to make these hasselback potatoes dairy free
  • Baste halfway through the cook time to impart the most flavor and allow more butter to seep into the crevices
  • Serve immediately for best results
  • Air fryer hasselback potatoes are best fresh, so repurpose leftovers into a breakfast hash, or slice all the way through so you have coins and air fry till crisp

These air fryer hasselback potatoes make a fantastic side dish for any meal! Here's a few of my favorite ways to serve them:

TOPPINGS: Similar to baked potatoes, you can top these with sour cream, shredded cheese, chopped chives, bacon, or even a little more butter. The possibilities are endless, so use your imagination

How To Store And Reheat Hasselback Potatoes

STORING: You can store any leftover potatoes in an airtight container in the fridge for up to 4 days. Reheat if desired, or repurpose into a breakfast hash.

REHEATING: These are best fresh, but can be reheated by cooking in the air fryer at 350F for 3-5 minutes.

Frequently Asked Questions

Can you make hasselback potatoes in advance?

You can, but I don't recommend it. They're not as crispy once reheated and tend to look sort of dull.

What is the best type of potato to use?

I prefer to use regular russet potatoes for this hasselback potato recipe, but Yukon gold potatoes are also very yummy.

Can I make hasselback potatoes without an air fryer?

Sure! You can also make them in the oven if you don't have an air fryer, all you have to do is heat your oven to 400F and and bake on a parchment lined baking sheet for 30-35 minutes. Baste the potatoes occasionally during the cook time with the butter mixture.

Am I able to make these dairy free?

Yes, if you want to make them dairy free (and vegan) substitute the butter with a vegan butter or just olive oil.

  • 4 medium size russet potatoes (washed and dried)
  • 4 tablespoons salted butter- melted
  • 1 clove of garlic- minced
  • ¼ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon onion powder
  • ¼ teaspoon ground mustard powder

Instructions

  2. In a microwave safe bowl, melt the butter and mix in the minced garlic, salt, pepper, paprika, onion powder, and mustard powder
  3. Place the potatoes into the air fryer basket and baste them with half of the butter mixture
  4. Cook at 400 F for 15 minutes, then baste with the remaining butter, and cook for 15 more minutes
  5. Serve immediately and enjoy
