Hasselback potatoes are thinly sliced and basted, then air fried so that the slices separate and develop a "fan-like" look. The basted butter seeps into the cracks and crevices to create a truly mouth watering dish.
Though this recipe does take a small amount of extra effort, the end result is totally worth it. Pair with a whole roast chicken or air fryer pork loin for a healthy, filling meal.
Ingredients for Air Fryer Hasselback Potatoes

- Potatoes: For these hasselback potatoes in the air fryer I prefer to use regular Russet potatoes. However, Yukon gold are another good option
- Butter: Butter helps these potatoes so be super flavorful and develop a nice, crisp exterior. If you'd rather not use butter, vegan butter or olive oil also work
- Spices: I like my potatoes to be super flavorful so I use a mixture of fresh garlic, salt, pepper, paprika, onion powder, and ground mustard powder. If you prefer to keep them simple, just use the garlic, salt, and pepper
How To Make Hasselback Potatoes In The Air Fryer
- Wash and dry your potatoes, then slice them into ⅛ inch slices making sure to leave ½ inch base at the bottom.
- Mix the melted butter with the spices and set aside
- Place the potatoes into the air fryer basket and baste them with half of the butter mixture
- Cook at 400 F for 30 minutes, basting halfway through with the remaining butter



How To Cut The Perfect Hasselback
While this recipe may look impressive and tricky, it really could not be easier. Here's a few tricks so that you can cut the perfect potato.
- Slice a small portion off of the bottom to create a flat surface
- Lay the potato flat and use a sharp knife to cut every ⅛ of an inch
- Try and leave about ½ inch of whole potato on the bottom so you don't cut all the way though. You can put 2 wooden spoons on either side of the potato to create a natural stop for your knife

- Choose potatoes that are all similar sizes so they cook evenly
- Don't cut all the way through the potato, you want about ½ inch left on the bottom
- You can peel the potatoes if you prefer
- Use olive oil or vegan butter to make these hasselback potatoes dairy free
