Air Fryer Diced Potatoes

Air fryer diced potatoes are crispy, flavorful, and SO easy. This recipe is simple and quick, needing just a few pantry staple ingredients and less than 20 minutes to cook. Diced potatoes in the air fryer make a great side dish for breakfast or dinner, and are also great for meal prep!

  • 1 1/2 pounds Yukon gold potatoes- cut into 1/2 inch cubes
  • 1 tablespoon olive oil
  • 2 teaspoons lemon juice + extra to garnish
  • 1 1/2 teaspoons fresh rosemary- finely chopped
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon onion powder


  1. Preheat your air fryer to 400 degrees F
  2. While the air fryer is heating up, wash and dry your potatoes and use a sharp knife to dice them into 1/2 inch cubes
  3. Place the diced potatoes into a large mixing bowl and add olive oil, rosemary, salt, cumin, pepper, and onion powder. Use your hands to stir well and ensure everything is well coated
  4. Dump the potatoes into your preheated air fryer basket, close, and cook at 400 F for 14-17 minutes shaking halfway through to ensure even cooking
  5. Once the potatoes are golden brown and cooked through take them out of the air fryer
  6. Squeeze over a tiny bit of lemon juice, serve, and enjoy


  • Dice the potatoes into 1/2 inch cubes
  • Red potatoes or Yukon gold potatoes yield the crispiest skin
  • Finely chop the fresh rosemary, or use 3/4 teaspoon of dried rosemary leaves
  • Season to taste
  • For best results, lay the potatoes in a single layer in the basket
  • Shake the air fryer basket halfway through cooking time to ensure even cooking
