WHAT YOU NEED TO MAKE AIR FRYER DICED POTATOES

Kitchen Tools:
- Sharp knife
- Mixing bowl
- Measuring spoons
- Air fryer
Ingredients:
- Potatoes: For best results, use Yukon gold potatoes
- Olive oil: The fat is needed to coat the potato skins and get them crispy as well as ensuring the middle stays fluffy and tender
- Seasoning: I used a simple blend of salt, pepper, garlic powder, onion powder, and rosemary
- Lemon: I like to squeeze just a touch of lemon juice over the roasted potatoes to brighten them and add more flavor
Substitutions:
- Olive oil- you can use avocado oil, another neutral oil, or even melted butter instead
- Seasoning- season to taste with elote seasoning, chili powder, chili lime seasoning, or even a lemon pepper blend
BEST POTATOES TO USE
I found that Yukon Gold Potatoes are the best for roasting because they have a thin skin which gets really crispy, allows the potatoes to cook faster, and isn't tough to chew.
If you can't find Yukon Gold Potatoes, red or fingerling potatoes will also work.

HOW TO STORE LEFTOVER ROASTED POTATOES
You can store any leftovers in an airtight container in the fridge for up to 5 days. These can also be frozen in a freezer safe bag and will stay good up to 1 year.
REHEATING:
The best way to reheat roasted potatoes is in the air fryer. Lay them in a single layer in your air fryer basket, spritz lightly with olive oil spray, and cook at 380 degrees F for 3-5 minutes.
SHOULD I SOAK THE POTATOES BEFORE COOKING?
To soak or not to soak, that is always the question. Most often, potatoes are soaked when making French fries to yield the crispiest possible fry by removing excess starch.
I find that it is not necessary to soak air fryer diced potatoes. You can skip a step and save time while still getting that crisp skin everyone loves.
