I think it's apparent how much I love air frying vegetables. From crispy sweet potato cubes and my favorite diced potatoes, to fall favorites like spaghetti and butternut squash. I just love how easy they are to make.
Beets are one of my favorite vegetables to eat, but I'm not a fan of how long it takes to roast them in the oven. It can take anywhere from 30-45 minutes for beets to soften in the oven, but this air fryer recipe takes not even 20 minutes.
These beets are seasoned simply with salt, pepper, and a touch of garlic powder to balance out their natural sweetness. They have a slightly crisp exterior and melt in your mouth tender middle. There's no doubt in my mind that these will be a new go-to side dish.

There's a few varieties out there! There are red beets, golden beets, striped beets, and sugar beets to name a few. All of them are packed with vitamins and nutrients and will work in this recipe.

- Beets: You can use any variety, but I like to use a mix of red and golden for more color.
- Olive oil: The oil helps crisp up the outside of the beet and tenderize the inside. You can also use avocado oil or melted coconut oil.

How To Roast Beets In The Air Fryer
- Preheat your air fryer to 400 degrees F
- Cut the stems and leaves off of your beets, peel them, and cut into ½ inch cubes.
- Place them into a large mixing bowl and add the olive oil, salt, pepper, garlic powder, and give it a good mix
- Place the beets into your air fryer basket in a single layer and cook at 400 F for 18-20 minutes, shaking halfway through
- Serve immediately and enjoy

- Preheat your oven to 375 degrees F and follow steps 2-3 listed above
- Lay your beets out in a single layer on a parchment lined baking sheet and place into the oven
- Cook for 35-40 minutes until for tender

One thing I love about this beet recipe is how versatile it is! You can enjoy them as a healthy carb with scrambled eggs for breakfast, or dip into avocado ranch for a snack, but they also make a delicious side dish. Here's a few dinners they would pair well with:
